Spiced Apple Slab Cake
This is a no-fuss, super moist and delicious cake. It uses up those apple that nobody wants to eat in a way that everyone will enjoy.

What apples are best for this cake?
Any type of apple will work for this cake! The best apples to use though are the apples that you really dont want to eat. You know those apples that just seem to just kind of follow you through the week. Maybe they travel to and from school every day in the kids lunch boxes. Longing to be eaten but ultimately getting completely ignored. Maybe they have been sitting in a fruit basket after a promise of “I will eat more fruit this week”. Or maybe you took a bite of one and it was flowery, dry or a little bit bruised causing an immediate loss in trust for the rest of them?
Well this recipe is where those specific apples belong!

How to serve
- Slice into 12 pieces and sprinkle over some icing sugar
- Serve warm and pour a generous serving of fresh vanilla custard
- Iced with cream cheese frosting and diced walnuts
Once these are cooked, the most poetic way to eat these is to wrap them up and send them back to school in those lunchboxes where they were ignored all last week. I promise they wont make it for a second trip!

Storage
Because of the fresh fruit used it this recipe, it is best eaten within 4 days. Store in an air tight container or cut into pieces and wrap individually in cling film to maintain freshness.
This cake is perfect for freezing, if anything freezing this cake makes it tastes even better! Wrap the whole cake (or individual pieces) in tin foil and then wrap again in cling film. Place flat in the freezer. This will store frozen for about 3 month. To defrost, remove the cake from the freezer and leave covered at room temperature for about 12 hours. Unwrap once the cake is defrosted and use as normal

Ingredients
Method
- Peel and grate both of your apples. You will want around 300 grams of grated apple for this recipe.
- Preheat oven to 170 degrees (fan bake) and line a large, deep baking tray with baking paper (approx 30 x 20 cm)
- In a large bowl mix together the oil, sugar and apple
- Add in the eggs and beat until everything is well combined
- Add in remaining ingredients and mix through until just combined
- Pour the cake batter into your prepared pan and bake for 40 minutes or until fully cooked through
- Cool fully before dusting with icing sugar
