Homemade Chocolate Ice Cream

This chocolate ice cream recipe has a super creamy texture and it’s loaded with a sweet, rich chocolate flavour. with just a few ingredients and a little patience you can make your own delicious chocolate ice cream for yourself.

Chocolate ice cream is one of those classic dessert options. Sweet, creamy and rich. What I love about homemade chocolate ice cream is how rich and creamy it is, how it has no waxy taste that so many shop brought chocolate ice cream has. And my favourite part is I can control the chocolate levels and additional flavors!

Chocolate ice cream variations

  • To make chocolate chip ice cream add 1/2 cup of chocolate chips or crushed flake bar to your ice cream maker in the last 2 minutes of churning.
  • If you want a darker chocolate boost you can increase the cocoa powder up to 3 tablespoons.
  • Use your favourite sauce (mine is this hot fudge sauce) to drizzle through your freshly made chocolate ice cream. Drizzle layers through the ice cream and use the back of a spoon to make ripples.
  • Mix through your favourite add ins. Chocolate brownie bites, fudge, diced nuts, or finely diced fruits are all good options
  • Add in a teaspoon of flavoured essence for a different flavour boost. Orange, raspberry or rum all make delicious additions.

Ingredients

Milk – Full fat milk is your best option here. The fat content is definitely better for making your ice cream rich and creamy. I do use low fat milk regularly though if that’s what I have on hand. But if I do use a lower fat milk I will generally add in an extra splash of cream to balance out the fat content.

Eggs – For this recipe you will need large 3 eggs. You will use 2 yolks and one whole egg. Eggs are key to the freezing process for homemade ice cream. They not only thicken the mixture in to a velvety custard, but they also ensure that ice cream does not form any little ice crystals while it is freezing. This ensures that your ice cream will come out smooth/creamy and not grainy/icy.  To save on food wastage you can store your leftover egg whites by freezing them to use later on in other recipes.

Sugar – Plain granulated sugar is perfect for this recipe. Feel free to switch out the sugar to brown sugar, honey or maple syrup when creating your own flavour combinations though.

Cocoa – Use your favourite cocoa powder here this gives you that base chocolate flavour without adding in any extra sweetness.

Chocolate buttons – I like to use a dark melting chocolate buttons. That way I know that they wont add too much extra sweetness. They will also melt really well in the hot ice cream mixture. You can absolutely use a milk chocolate here instead just be prepared for a sweeter ice cream.

Cream – What is ice cream without cream? You need to use a heavy cream, full fat whipping cream to make ice cream.

Serving and Storing your chocolate ice cream

You have 2 serving options once your ice cream has finished churning in your ice cream maker

  1.  Serve immediately for a soft serve consistency.
  2.  Scoop into a freezer safe, sealed container and freeze for at least 3 hours for a more traditional, firm ice cream texture.

Scoop and serve however you like.

Store your ice cream in a sealed, freezer safe container for up to 2 months.

Ingredients
  

  • 1 cup milk
  • 1 whole egg
  • 2 egg yolks
  • 1/2 cup sugar
  • 1 tablespoons cocoa powder
  • 1/3 cup chocolate buttons
  • 1 cup cream

Equipment

  • ice cream maker frozen for 24 hours prior
  • small saucepan

Method
 

  1. Pre-freeze the ice cream maker base for 24 hours
  2. In a small bowl whisk together the whole egg, yolks, sugar and cocoa
  3. using a fork. Whisk until light and creamy
  4. Heat the milk in a medium sized saucepan until it is warm
  5. Add in the whipped eggs and stir constantly for about 5 minutes Keeping the heat at a medium temperature. When it is ready the mixture will have thickened slightly and will coat the back of your mixing spoon
  6. Remove the mixture from the heat and add in the chocolate buttons and leave to melt for a few minutes before mixing through. The chocolate should fully dissolve into your ice cream base.
  7. Set aside to cool fully in the fridge (about 1-2 hours).
  8. Add in your cream and mix through.
  9. Pour into your prepared ice cream maker and churn for 45 minutes – 1 hour. The ice cream will resemble soft serve
  10. Eat now or scoop into a plastic container and store in the freezer
