Red Pepper Pasta

Roasted red pepper pasta is the a perfect example of maximum flavour with minimum effort.

I love to have a couple of easy recipes on hand for those days where I just cant be bothered cooking but I really want something delicious for dinner. Comfort food at its finest.

How to make and serve roasted red pepper pasta

This recipe uses jarred red peppers (red capsicums) and sun-dried tomatoes for convenience. These are blended into a smooth creamy sauce alongside cream cheese, garlic powder, paprika and black pepper. This sauce is poured over your favourite cooked pasta and simmered until it is warmed through.

This pasta dish is delicious served on its own with a sprinkling of freshly cracked black pepper and grated cheese.

I also like to serve this dish with meatballs or with shredded roast chicken. It is also delicious topped off with some crispy roasted chickpeas.

Can you use fresh red peppers / capsicum instead of jarred?

To make this recipe you will need roasted red peppers. If you have an abundance of fresh peppers or capsicums you can roast and peel them yourself instead of using the jarred version.

  • To do this cut your peppers in half and scoop out the seeds before lightly coating them with a little bit of cooking oil.
  • Roast them in your oven on a high heat until the skins are blackened.
  • Cover them with cling wrap and allow them to cool
  • Peel the skin off and they are ready to go!

Roasted Pepper Pasta

Ingredients
  

  • 400 grams fresh or dried pasta
  • Salt
  • 150 grams roasted red peppers capsicum
  • 60 grams sun-dried tomatoes
  • 60 grams cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Cracked black pepper
  • 1/2 cup pasta water

Method
 

  1. Prepare a large pot of salted water to cook your pasta
  2. Cook your pasta according to the directions on the packet.
  3. While the pasta is cooking place your red peppers, sun-dried tomatoes, cream cheese, garlic, paprika and about a teaspoon of pepper into a tall narrow container.
  4. Once the pasta is just cooked through scoop out 1/2 cup of the water from the pot and add it to your prepared sauce ingredients. Strain the pasta and set aside while you finish preparing your sauce.
  5. Blend the sauce ingredients using a stick blender. Continue until the sauce is completely smooth.
  6. Pour both the sauce and your cooked pasta back into your cooking pot and heat on a low to medium temperature until the sauce and pasta are hot.
  7. Season with salt and pepper if needed before serving.
