Peanut Butter Pie

Rich and loaded with peanut butter flavour, this peanut butter pie is absolutely delicious. This is a no bake recipe that is quick to make and is guaranteed to impress.

Peanut butter pie has been a favourite in our house for many years now. This crunchy oreo base is paired with a creamy smooth peanut butter filling and it is all topped off with dark chocolate.

This recipe is so simple to make

  1. Crush oreos and mix together with melted butter.
  2. Press into a non stick pie dish and chill for 30 minutes.
  3. Mix together peanut butter and thickened cream.
  4. Melt marshmallows with a little bit of water.
  5. Mix your  peanut butter mixture into your melted marshmallows before pouring that into your prepared base.
  6. Chill for 1 hour before topping with your favourite dark chocolate topping and serve.

What you need to make peanut butter pie

Peanut butter – Use your favourite smooth peanut butter for this recipe. You will use about one cup of peanut butter.

Oreo biscuits – Plain, filled oreos are crushed to create a no bake crust for your pie. You will use 2 packets of oreos or 240g.

Butter – Melted butter is used to hold your base together. Use salted or unsalted depending on your preference.

Thickened cream – Thickened cream is used to give your filling structure and softness while not adding any more sugar or richness. You can replace this with heavy whipping cream. If you do so, you will need to increase your marshmallows to about 250g and your pie will come out  a bit on the sweeter side.

Marshmallows – The marshmallows in this recipe are melted down to form the filling of your pie. marshmallows are also the only sweetener that you will use in your filling. The pink and white combo of marshmallows are totally fine. The pink will not make any difference to the colour of your finished pie.

Dark chocolate – Dark chocolate is the perfect finishing tough to your peanut butter pie. I like to use this as an opportunity to theme it to match the occasion. You can leave this out if you prefer or even swap it out for a different topping.

Finishing touches

Dark chocolate is the perfect flavour to add an extra layer of richness to your peanut butter pie.

Here are 3 different ideas for you to garnish your peanut butter pie

– Chocolate pieces

You can roughly chop pieces of dark chocolate to sprinkle over the top of your pie. How about the perfect option for a spooky halloween themed pie? Pour melted chocolate into chocolate moulds and let them set. Place them on top of your peanut butter pie after slicing it for serving.

– Dark chocolate ganache

Melt chocolate in hot whipping cream (200g chocolate to 75g cream) to make a thick ganache that can be poured on top of your pie. This will be thick enough to hold its shape and will be easy to slice through.

– Chocolate whipped cream

Whip a 1/2 cup of whipping cream with 1 tablespoon cocoa and 2 tablespoons of icing sugar. Whip until your cream is a thick piping consistency and pipe over your set pie just before serving.

Ooooorrrrr…. why not do all 3 like I have done here! Start with the ganache, pipe on whipped cream and then decorate with chocolate pieces. Yum!

Chilling time 1 hour 30 minutes
Total Time 1 hour 50 minutes
Servings: 12 slices

Ingredients
  

Base
  • 2 packets of oreo biscuits
  • 110 g butter
Filling
  • 250 g thickened cream
  • 1 cup peanut butter
  • 1 packet of marshmallows 180g
  • 2 Tbs water
Toppings (optional)
  • Dark chocolate
  • Whipping cream
  • Cocoa
  • Icing sugar

Method
 

Base
  1. In a food processor, blend your oreos until they completely crushed and resemble a coarse powder.
  2. Add in the melted butter and then pulse until well combined.
  3. Spread the oreo mixture into a non stick pie dish that has a removable bottom. Press the mixture down evenly making sure to bring it up the sides 2-3 cm as well.
  4. Place your pie base into the fridge to chill for at least 30 minutes.
Filling
  1. In a large bowl use an electric beater to mix together the cream and peanut butter. Mix until well combined.
  2. In a medium sized saucepan, heat the marshmallows and water on a low heat. Stir constantly until the marshmallows are fully melted, then turn off your heat.
  3. Add the peanut butter mixture into the marshmallows and mix well until the mixture is smooth and well combined.
  4. Pour the filling into your prepared base and place in the fridge to set for at least one hour.
Topping/serving
  1. Finish off your peanut butter pie with the toppings of your choice (see notes)
  2. Remove your pie from its tray before slicing and serving

Notes

Store in the fridge for up to 5 days.
 
Ganache 
Pour 75g hot whipping cream over 200g dark chocolate. Leave for 2 minutes to allow chocolate to fully melt before mixing through. Pour over your pie and allow to set for 1 hour. 
 
Chocolate whipped cream 
Whip 1/2 cup of heavy whipping cream with 2 tablespoons of icing sugar and 1 tablespoon of cocoa powder. use a piping bag to pipe a ring of cream around the outer edge of your pie.
