Mint Chocolate Ice Cream

Ice cream made at home

I’ve said it before and I will say it again, home made ice cream is definitely the best type of ice cream! And this mint chocolate ice cream absolutely confirms that.

Home made ice cream is a lot easier to make than it may seem. I started making ice cream in my teens with a simple ice cream maker that I brought at a second hand shop for a couple of dollars. I still use that ice cream maker, to this day, to make the best ever ice creams, frozen yogurts and even sorbets. With a few easy to follow steps and your trusty ice cream maker you will be making your own frozen desserts in no time at all.

Ingredients

Milk – Full fat milk is your best option here. The fat content is definitely better for making your ice cream rich and creamy. I do use low fat milk regularly though if that’s what I have on hand. But if I do use a lower fat milk I will generally add in an extra splash of cream to balance out the fat content.

Eggs – For this recipe you will need large 3 eggs. You will use 2 yolks and one whole egg. Eggs are key to the freezing process for homemade ice cream. They not only thicken the mixture in to a velvety custard, but they also ensure that ice cream does not form any little ice crystals while it is freezing. This ensures that your ice cream will come out smooth/creamy and not grainy/icy. To save on food wastage you can store your leftover egg whites by freezing them to use later on in other recipes.

Cream – What is ice cream without cream? You need to use a heavy, full fat whipping cream to make ice cream.

Chocolate – I like to use crushed flake bars for ice cream because it has the best texture when it is mixed through the ice cream and frozen. You could also use regular chocolate chips or grated chocolate if you like.

Sugar – Plain white granulated sugar.

Change up your mint chocolate ice cream

Don’t feel limited by the classic mint chocolate chip style for your mint chocolate ice cream. There are so many other combos that you use to make this recipe your own!

Cookies and mint ice cream – Like cookies and cream but a mint flavor! Crush a couple of Oreos or mint slice cookies and add them in the last 5 minutes of churning.

Mint chocolate ripple – Make your ice cream following the directions listed but leave out the chocolate flakes. When you scoop your ice cream into a container add a few drizzles of chocolate sauce (this chocolate hot fudge sauce recipe is a great option!). Swirl the chocolate sauce through a little bit and then place it into the freezer to firm up.

Christmas candy cane ice cream – Leave out the green food coloring and trade the chocolate flakes for crushed candy canes. Perfect for Christmas or just a great way to use up any leftover candy canes.

Double chocolate and mint ice cream – If you like your mint with extra chocolate try using my chocolate ice cream as a base instead. Add the peppermint essence instead of the vanilla, then add your chocolate flakes in the last 5 minutes of churning.

Mint Chocolate Chip Ice Cream

Ingredients
  

  • 1 cup milk
  • 2 egg yolks
  • 1 whole egg
  • 1/2 cup sugar
  • 1 cup cream
  • 1/2 teaspoon peppermint essence
  • a few drops of green food coloring
  • 1/4 cup crumbled chocolate flake bars

Method
 

  1. Pre-freeze your ice cream maker base for 24 hours
  2. In a small bowl whisk together the eggs and sugar using a fork. Whisk until the mixture is light and creamy.
  3. Heat your milk in a medium sized saucepan until it is warm to the touch (40 degrees Celsius)
  4. Pour the whipped eggs into to your milk, stirring constantly. Continue to heat and stir the milk mixture for about 5 minutes. Keep the heat at a low to medium temperature reduce it slightly if the mixture begins to boil. When it is ready the mixture will have thickened slightly to the point that it will coat the back of your mixing spoon.
  5. Remove your saucepan from the heat. Pour your mixture into a small bowl and place it in the fridge, covered to cool fully (about 1-2 hours)
  6. When you are ready to churn your ice cream, add in the cream , peppermint and food coloring, mix well to combine.
  7. Pour the ice cream base into your prepared ice cream maker and churn for 40 minutes before adding in your chocolate. Allow the ice cream to continue churning for another 5 minutes or until the chocolate is well distributed. The ice cream will resemble soft serve when it is ready.
  8. Serve your ice cream now as a sort serve style ice cream or scoop it into a plastic container and store in the freezer.

Store in the freezer for up to 3 months
