Eggnog Custard Pudding
This eggnog custard is thick, rich and creamy. Make this recipe and you will have a deliciously spiced, easy to make, festive dessert this Christmas.

Why you will love eggnog custard

- It’s super versatile. Serve it on its own or use this as a way to spice up another dessert.
- This recipe is kid friendly. Its like cinnamon rolls in the form of custard. But you can absolutely add some rum or brandy if you want a more adult version.
- Its easily adaptable to be allergy friendly. It is naturally gluten free. For dairy free, swap the milk and cream for 2 1/2 cups of your favorite soy or oat milk. And for egg free you can swap out the egg yolks for 2 more tablespoons of cornflour.

Ingredients
Egg yolks – Eggnog means eggs, and eggs can be expensive especially when you are only using half of the egg. So I have kept this recipe as minimal on eggs as I can, while still retaining all of the flavor.
Sugar – I have used white sugar for this recipe but I sometimes like to use brown sugar for a richer caramel flavor. This is a sweet custard. You can absolutely reduce the sugar if you like.
Cornflour – To thicken your custard without using too many eggs.
Spices – Ground cinnamon and nutmeg.
Cream – Heavy cream
Milk – Use whatever milk you like. The higher in fat the milk is, the richer the custard will be.
Flavoring – I have used vanilla essence but you can change it out for 1 teaspoon of rum or brandy essence. You can also add rum, brandy etc add a splash of your alcohol of choice once the custard has mostly thickened.


This custard is perfect on its own for an easy dessert but its so versatile, you can dress it up so many different ways.
Pour warm eggnog custard over your favorite Christmas pudding. This is my favorite Christmas steamed pudding recipe!
Set individual servings in cute ramekins or glasses and top with whipped cream and fruit or crushed brandy snaps.
How about an eggnog pie? Add an extra tablespoon of cornflour to your yolk mixture. Then pour the custard into a prepared pie dish, set and decorate for an eggnog pie.
You could also use this as the custard layer for a Christmas trifle. Layer a simple sponge cake, eggnog custard, and whipped cream then top it all off with some crushed brandy snaps for the most Christmasy trifle ever.


Eggnog Custard Pudding
Ingredients
Method
- Place the egg yolks, sugar, cornflour and spices into a small bowl along with half of your cream (1/3 cup).
- Use a fork to whisk the ingredients well. Whisk until the mixture is creamy and has lightened in colour slightly.
- Place the remaining cream and milk into a medium sized saucepan.
- Heat the mixture on medium low until it is warm to the touch (about 40 degrees Celsius)
- Slowly pour the whipped yolk mixture into the warm milk. Stir the mixture slowly and constantly until it has combined completely. Keep the heat at a medium low temperature and do not allow the liquid to boil.
- Continue heat your custard, stirring constantly, until the mixture has thickened. It should be the consistency of yogurt. This will take around 8-10 minutes depending on your temperature.
- Remove your thickened custard form the heat and stir through your vanilla. Pour your eggnog custard into a large serving dish or individual serving dishes.
- Cover with clingfilm and place into the fridge to cool and set or to store chilled. If you are serving warm you can serve immediately.
