What is a funnel cake?

A funnel cake is not a cake at all! It is a deep fried treat similar to a donut or churros but it is made by drizzling a thin batter into hot oil. All of that deliciously fried goodness then gets doused in icing sugar.

Can I make bigger or smaller funnel cakes

Yes! To do this simply change the size of your sauce pan. You will need to alter the amount of oil that you use. to do this. You want your saucepan to be about half full.

Can I make these ahead of time?

Not really, these are best eaten fresh from the fryer while they are still warm and crispy. They do loose a lot of their crispiness once they cool down. However you can make the batter up to 2 days ahead of time. To do this, follow the recipe until the step where you transfer the batter a snaplock bag. Then you can seal your bag and place it in the fridge until your ready to use it.

Other ways to fry your funnel cake batter.

If you do not have a large snap-lock bag on hand you could either use a funnel or small jug that has a pouring spout to drizzle the batter into the dough.

To use a funnel – place about a half a cup of the batter into the funnel holding your finger over the hole at the bottom. Next hold the funnel over the hot oil remove your finger and guide the stream of batter to form wriggly circles and zig-zags.

To use a spouted jug – This is similar to the funnel method. Place your batter into the jug and tip over your oil in as thin of a stream as you can manage. Make circles and zig-zags to achieve your classic funnel cake pattern

Topping ideas

While icing sugar is definitely the traditional topping for these delicious funnel cakes, feel free to top flavour these with any topping you like some of my favorites are…

  • Strawberry milkshake mix. Get that full sweet strawberry flavour with little to no effort.
  • Chocolate. Use hot chocolate mix or icing sugar mixed with cocoa. Dust this over your freshly fried funnel cakes!
  • Cinnamon sugar. We always have cinnamon sugar sitting in the pantry leftover from donuts or cinnamon rolls. It goes perfectly with these for a sweet spiced treat.
  • Hot fudge chocolate sauce, vanilla ice cream and whipped cream. Why not turn these into a full dessert spectacle! Dollop ice cream on to and then drizzle over a generous helping of chocolate sauce and top it all off with whipped cream and sprinkles!

Ingredients
  

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • Pinch of salt
  • 1 cup plus 2 tablespoons milk
  • 1 egg
  • 1 teaspoon vanilla essance
  • 500 ml cooking oil for frying
  • Icing sugar for serving

Method
 

  1. Combine your flour, baking powder, sugar and salt together in a medium sized bowl.
  2. Create a well in the center of your dry ingredients before adding your remaining ingredients.
  3. Use a fork or a whisk to whisk the ingredients together until well combined. The mixture should be smooth and be of a pouring consistency similar to pancake batter. If it is too thick, feel free to add an extra tablespoon or two of milk.
  4. Open a large snap-lock bag (or piping bag) and pour all of your batter into it. Close the seal on the top removing all of the air out of the bag before you do so. I like to also tie off the bag or add a piece of tape to secure the batter before continuing.
  5. Set your batter aside while you prepare your oil for frying.
  6. Place your oil into a small to medium sized saucepan and begin to heat on a medium temperature. Allow your oil to reach 190 degrees celcius before frying your funnel cakes.
  7. When your oil is ready, cut one of the pointed corners of your snap-lock bag off. You want to create an opening that is about 1 cm round.
  8. Drizzle a thin stream of batter into your hot oil, you want to make circular and zig-zag style movements.
  9. Let your funnel cake fry for about 90 seconds. Use a pair of metal tongs to flip it and cook for a further 90 seconds on the other side
  10. Remove your cooked funnel cake from the oil and place on a paper towel to drain off any excess oil while you cook your next funnel cake.
  11. Repaet this process until you have used all of your batter.
  12. Transfer your cooked funnel cakes onto plates for serving
  13. Serve immefiately with a generous sprinkling of icing sugar.

Notes

Use a larger saucepan to make larger funnel cakes. this recipe will make 8 small servings or 4 large ones.
