Ham and Cheese Scones

Savory scones do not get enough love. They have all of the best qualities of regular sweet scones but with the added bonus of cheese, garlic and ham. These ham and cheese scones are so easy to make and are absolutely delicious.

Ingredients

Butter – The key to any flaky scone is cold butter. Keep your butter chilled and grate it just before adding it to your flour.

Cheese – Any firm grate-able cheese will work well for this recipe. I have used Edam for mine.

Ham – You can used leftover glazed ham or sliced deli ham for this recipe. Make sure that it is diced so that it will mix through your dough well.

Garlic – For an extra layer of flavoring. Crushed or dried garlic will work well in this recipe.  

Milk – This is your binding ingredient. Use a full fat milk. You will use a little extra milk to brush over the scones just before baking.

You will also need…

Plain white flour, baking powder, sugar and salt.

Can you change the flavorings?

Absolutely! For a spicy option, swap out your ham for a couple of diced jalapenos. Add a little greenery with some green onions or herbs. For a pizza style scone you could swap the ham for some diced pepperoni and add in a tablespoon of tomato paste. You could even just make plain cheese scones by leaving out the ham and fill your scones with your favorite flavored fillings.

How to make your ham and cheese scones

First, rub your grated butter into your flour. Work quickly and use your fingertips.

Next, add in all of your remaining ingredients and mix until the mixture has just combined.

Roll your dough out and place onto a lined baking sheet. Cut your scones into 16 pieces and bake at 170 degrees for 25 minutes

And that’s it, your scones are ready to serve or allow them to cool fully to store.

Storing your scones and making ahead.

To store your scones, allow them to cool fully before wrapping them individually in cling film. Because of the ham, you will need to store your scones in the fridge or freezer. They will last up to 3 days in the fridge or up to 3 months in the freezer.

Store individual scones in the freezer, wrapped firmly in cling film, for up to one month. To defrost / reheat microwave your frozen scone for 90 seconds.

It is also easy to make these scones ahead of time by freezing your dough. You will need to prepare your scone dough, roll it out, and cover in clingfilm. Place your wrapped dough in the freezer for up to a month. Allow your scones to defrost in the fridge for a couple of hours before you bake them.

These ham and cheese scones are so easy to make and are absolutely delicious. They have all of the best qualities of regular sweet scones but with the added bonus of cheese, garlic and ham.

Ingredients
  

  • 75 g cold butter grated
  • 450 g flour
  • 2 tablespoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 teaspoon crushed garlic
  • 1 cup grated cheese
  • 150 g diced ham
  • 1 cup milk plus extra for brushing

Method
 

  1. Preheat your oven to 170 degrees, fan bake and line a large baking tray with baking paper.
  2. Place your flour and butter into a large bowl. Use your fingertips to rub together the butter and flour until the mixture resembles breadcrumbs.
  3. Add the baking powder, sugar and salt and give the mixture a quick stir. Then add all of the remaining ingredients and mix until just combined.
  4. Turn the rough dough out onto a floured bench top and gently knead and press the dough until it has formed together.
  5. Roll out your dough into a large circle. It should be just less than 3 cm thick and around 30 cm in diameter.
  6. Transfer the rolled out dough onto your lined baking tray and cut the scones into 16 pieces. Keep the pieces together so that they do not harden too much when they bake.
  7. Brush the surface of the scones lightly with a little extra milk
  8. Bake for 30 minutes or until the scones are golden and baked through.
  9. Serve warm with plenty of butter.

Notes

Store covered in the fridge for up to 3 days
Store individual scones in the freezer wrapped firmly in cling film for up to one month.
To defrost / reheat microwave your frozen scone for 90 seconds.
