No Bake Honey Slice

A simple sweet treat to fill up lunchboxes or afternoon tea plates. This slice has a subtle honey flavour throughout and is super easy to make.

Honey slice

No bake slices are such a simple way to create a sweet treat for your household. No need to turn on the oven, no over baking and almost no risk of messing it up.

This one in particular was a huge hit at my sons birthday party a few years back and has regularly found its way into the baking rotation. Whenever a sweet honey craving kicks in this is most likely the recipe I will reach for.

Tips

You should definitely use a food processor to crush the biscuits up if you have one. It is by far the easiest and cleanest method! If you don’t have one then you can still crush the biscuits by placing them into a large, strong zip lock bag. Make sure you remove the air out of the bag before sealing it and then lay it on cleared bench top and smash away with a rolling pin. In the very likely instance that the bag tears, pops or just completely  explodes, just scoop the crumbs into your bowl and continue to bash it with the rolling pin handle. This is a great method if you have some inner rage to deal with!

Substitutions

  • The biscuits can be substituted with any other plain, smooth un-iced biscuits. I have used the super-wine biscuits in the past without much difference in flavour or texture. To make this recipe gluten free, substitute the biscuits for gluten free arrow root or similar.
  • The butter I use is salted but feel free to use unsalted if you prefer.
  • The honey that I use is creamed clover. You can definitely just use any type of honey that you have on hand. No need for fancy expensive types here. Just avoid using super runny pourable varieties as this may not result in the same firmness for the icing.

Ingredients
  

Base
  • 1 250g packet vanilla round biscuits
  • 1/2 cup shredded coconut
  • 100 g butter
  • 150 g sweetened condensed milk
  • 60 g honey
Icing
  • 30 g honey
  • 30 g butter
  • 1 1/2 cup icing sugar
  • 1-2 tbs cream

Method
 

  1. Line a medium baking tray (approx 22 x22cm) with baking paper.
  2. In a blender, blitz the biscuits until they are a coarse crumb.
  3. Mix the crumbs and coconut together in a medium sized bowl.
  4. In a small saucepan melt 100g butter on a low heat.
  5. Once that is melted pour in your sweetened condensed milk and 60g honey. Heat, stirring constantly, until the mixture is well combined and warmed through. Do not let boil.
  6. Pour the hot liquids over the biscuit mixture and quickly mix together to combine.
  7. Press the mixture into your lined baking tray and leave in the refrigerator for at least 1 hour to set
  8. To make icing place your honey and butter into a small microwaveable bowl and heat for 30 seconds
  9. Add 1/2 cup of icing sugar and mix thoroughly. Add another 1/2 cup of icing sugar and 1 tbs of cream mixing again until well combined. Add the last of your icing sugar and mix (add extra cream if it is too thick. The icing should be quite thick but still spreadable).
  10. Spread the icing over your base and let set in the fridge for another 30 minutes
  11. Remove from the fridge and slice into 12 even pieces.
