Pink Lemonade

Fresh strawberries give this refreshing drink its pink hue. Perfect for those long, hot summer days, pink lemonade is a simple drink that uses only 4 ingredients and is guaranteed to brighten up your day this long sunny season.

Pink lemonade is simply lemonade that is pink

You can color your lemonade with food coloring, fruit juices or real fruit.

For my pink lemonade I use strawberries. I really like to ensure that the flavour of the lemon and the “pink” addition both shine.

To do this you will simmer the strawberries in lemon juice, sugar and water to create a syrup that is then blended and sieved and added to more water to create the perfect pink lemonade.

What you will need

Strawberries – Use fresh strawberries if you have them. Those ugly ones that are a little bit sad looking or mushy are perfect for pink lemonade. Alternatively frozen strawberries work great too and are perfect for an any season treat.

Lemon juice – I usually just use bottled lemon juice for this recipe. Fresh lemons are great too though. To get the most out of your lemons, zest them first and use the zest in some lemon baking!

Sugar – This is where you can tweak the recipe to your own tastes. I find one cup of sugar to one cup of lemon juice is the perfect balance for my household. For a more tart lemonade use less sugar. You can swap out the sugar for a sugar free alternative or you could even use honey for more natural flavoring. If you do use honey, you will want to reduce it to around 2/3 cup as honey can be much stronger in sweetness.

Water – Sparkling water is my go to for this recipe. Flat bottled water or tap water are also totally fine. You will use 6 cups or 1.5 litres in total

Other serving suggestions

  • Pink lemon iced tea – simply add cold brewed iced tea instead of water to the fruit syrup.
  • Pink lemonade cocktails – pair your pink lemonade with vodka or gin.
  • Pink lemonade ice blocks – freeze some pink lemonade in for the kids this summer. Simply pour into ice block molds and freeze.
  • Serve at a picnic – this is great for transporting and sharing with friends and family. A special valentines day picnic would be perfect!

Helpful notes

How to store your pink lemonade? Store your pink lemonade in the fridge for up to 7 days.

Do you have dietary issues? This recipe is naturally gluten and dairy free as it is simply fruit, sugar and water. If you are reducing sugar, you can use artificial sweetener or swap the sugar for 2/3 cups of honey for a natural alternative.

Don’t like strawberries? Or cant eat them? This recipe will also work with raspberries, cherries, blueberries or cranberries too. The color and flavor will be different but it is fun to experiment with recipes so give a different fruit a try!

Don’t have an immersion blender? That’s totally fine, just sieve your syrup through as you would once it was blended. Your strawberry flavor and color will still come through. Press the strawberries and get out as much juice as possible.

Ingredients
  

  • 1 cup lemon juice
  • 1 cup sugar
  • 125 g strawberries
  • 1.5 litres water sparkling or flat

Method
 

  1. Prepare your strawberries by removing the tops and roughly slicing them.
  2. Place your strawberries, lemon juice and sugar into a large saucepan with 1 cup of water.
  3. Heat over a medium high heat, stirring your mixture until the sugar has dissolved. Allow the mixture to simmer until the the strawberries are soft and the syrup has turned a reddish pink color.
  4. Use an immersion or stick blender to blend the syrup until it is smooth.
  5. Sieve your liquid into a large bowl or 2 litres drinks pitcher. Place this into the fridge to allow the syrup to cool fully.
  6. When your syrup is fully chilled, add the remaining 1.25 litres (5 cups) of water and stir.
