Sprinkle crinkle cookies for Christmas

Crinkle cookies are definitely fun and festive. These cookies are 100% a Christmas cookie in our house. With their snowy, icing sugar outside and the festival of colors on the inside, these cookies are always a winner.

Making sprinkle crinkle cookies

For this recipe you will make a soft sticky dough that is speckled with 100s and 1000s sprinkles. The sticky cookie dough is rolled in icing sugar and baked. As your cookies bake the surface will crinkle allowing the cookie surface to peek through the thick sugary layer. Bake these until they are just cooked and allow to cool slightly before you dive into the sugary mess of your sprinkle crinkle cookies!

Tips and tricks

  • Make sure you chill the dough for at least an hour. The chilled dough makes the cookie dough firm enough to scoop and shape, while still being sticky enough to hold onto all of that icing sugar topping.
  • Do not over mix the dough. If you over mix your dough the sprinkles will smear their colour through your dough.
  • If in doubt, double dip. Make sure that your cookie dough is absolutely loaded with icing sugar. If you dip all of your cookies and the icing sugar lay is looking a little bit thin then go for a second dipping.
  • Do not bake these cookies for too long. You are not looking for golden brown, crispy cooked signs here. Allow the cookies to crinkle on the surface, they will be slightly firm when they are done with a bit of give in the center.
  • Freeze and make later. If you want to make these ahead of time or if you want to cook some now and some later then freezing is a great option! Shape your cookies (without coating them in icing sugar) and place them on a sheet of baking paper place that in the freezer. Allow them to freeze fully before transferring them to a snap lock bag for storage. To bake simply defrost, dip in icing sugar and bake for 12 minutes.

Ingredients
  

  • 2 cups flour
  • 1/4 cup cornflour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup sprinkles
  • 60 g butter
  • 1/2 cup icing sugar
  • 1/2 cup white sugar
  • 1 tablespoon milk
  • 2 eggs
  • 2 teaspoon vanilla
  • Extra icing sugar for dipping

Method
 

  1. In a large bowl, sift together the flour, cornflour, baking powder, baking soda and salt.
  2. Add the sprinkles and gently mix to combine.
  3. In a medium saucepan, melt the butter, sugars and milk together. Heat, stirring constantly, until the sugars have dissolved. Remove the saucepan from the heat and allow to cook slightly.
  4. Add the eggs and vanilla to your cooled butter and sugar mixture. Mix well to combine.
  5. Scoop the contents of your saucepan into your bowl of dry ingredients. Mix until all of the dry ingredients have combined with the wet. The mixture should be thick and sticky
  6. Cover the cookie dough with cling film and place it into the fridge for at least 1 hour. The dough will be less sticky now.
  7. Preheat your oven to 160 degrees, fan forced and line 2-3 baking trays with baking paper
  8. Take a heaped teaspoon of the batter and roll it into a ball before flattening it slightly to form a thick disk shape.
  9. Place the cookie dough into a small bowl of icing sugar and cover the disk in a thick layer of icing sugar .
  10. Place it on your baking sheet and repeat until you are out of dough.
  11. Bake in batches for 12 minutes or until the cookies surfaces have crinkled and are just baked through.
