Strawberry Cake
Fresh strawberries shine in this delightful heart shaped strawberry cake. This is a simple, moist vanilla cake that is speckled with beautiful bursts of pink strawberries.

Strawberry cake is such a wonderful cake for summer.
It also really works well for any occasion.
Valentines day, birthdays, christmas in summer, simple afternoon teas. If strawberries are in season then that is more than an excuse to bake a strawberry cake.
I like to buy strawberries when they are at their cheapest and make all of my strawberry favorites like this strawberry cake, pink lemonade and strawberry dutch baby.

Making your strawberry cake
This really is a no fuss recipe with simple ingredients and simple steps.
- Preheat your oven and prepare your baking dish.
- Dice a punnet of strawberries and set aside.
- Cream together some butter and sugar and then mix through the vanilla and eggs.
- Add all of the remaining ingredients and fold through gently until it is just combined.
- Bake for 45 minutes.
- Cool decorate and serve.




Decorate and serve it however you like!
I have decorateded mine for a valentines day picnic.
-For a sweet heart style cake baked your cake in a heart shape like I have here.Decorate with a simple pink vanilla buttercream.
– Some other great frosting flavors are, strawberry, lemon, white chocolate, cream cheese or ermine frosting
– For a lighter option you can top your cake with a layer of whipped cream and decorate with fresh strawberries.
-This cake is also delicious simply baked, dusted in icing sugar and served warm for afternoon tea.

Lining a heart shaped baking tin
Heart shaped cake tins can be tricky to line with baking paper so here is a helpful guide to help you.
Grease the tin with a little bit of butter.
Next place your tin on top of your baking paper and trace the base of your tin making sure that you have plenty of space around it to line up the sides.
Flip the paper over and use scissors to snip long cuts from the edge of the paper through to the heart outline. The cuts should go about 1cm through the heart outline. Continue to make cuts evenly around the piece of baking paper in a starburst style.
Place the baking paper into your greased tin with the traced heart in line with the base of your heart tin. Press the paper smoothly against your tin, start from the center, smoothing towards the corner and then up the sides.
Add your cake batter and bake.

Method
- Preheat your oven to 160 degrees(fan bake) and line a 22cm cake pan with baking paper.
- Wash and trim the tops off your strawberries. Finely dice the strawberries and set aside.
- Mix the butter and sugar together in a large bowl. Beat the mixture until the mixture is light and well mixed.
- Add in the eggs and vanilla. Mix well to combine.
- Add in your remaining ingredients. Use a spatula or wooden spoon to gently fold the mixture through. Mix until everything has just combined.
- Pour into your prepared cake pan and bake for 45 minutes or until the cake is golden and fully cooked through.
- Remove your cake from oven and cool completely before icing with your favorite icing.
- Store in a cool dry place for up to 5 days.
Notes
125g softened butter
2 1/4 cups icing sugar
1 tablespoon vanilla essence
2 tablespoon cream
1/2 teaspoon pink food coloring Use an electric whisk to combine the butter with 1/2 cup icing sugar. Whisk well until the mixture is smooth, creamy and has lightened in color.
Add another 1/2 cup of icing sugar with your vanilla essence. Whisk well until smooth and creamy.
Add one cup of icing sugar and your cream. Whisk well until smooth and creamy.
Add the food coloring and the remaining 1/4 cup of icing sugar. Whisk well. Check your buttercream for your desired consistency. You can add a little more cream if it is too thick or more icing sugar if it is too thin. Spread or pipe on top of your cooled cake to decorate.
