Strawberry Dutch Baby

What is a Dutch baby?
This is one of the most impressive, extremely low effort recipes that you can make. It is kind of like a cross between a Yorkshire pudding and an oven baked pancake. Its cooking method is very similar to a Yorkshire pudding. It uses eggs and a high heated fat (butter in this case) to achieve its rise and crispy edge. However the flavour is much more like a thick pancake and it is usually served as such.

Steps to make the perfect strawberry dutch baby
– Collect all of your batter ingredients and place them into your blender
– Blend until smooth and then set aside in the fridge until later. This gives the batter time to rest while you prepare the base.
– Choose your baking dish while the batter rests in the fridge. I like to use a heavy ceramic dish that is approx 17 x 25cm. A cast iron skillet would also be great for this or even a metal baking tin. You need the baking dish to get very hot in this process so anything that will hold a higher heat while baking is great. If your dish is larger or smaller than mine you will need to adjust your cooking time slightly though.
– Prepare your base. Spread the butter all over the base of your dish. softened butter is best for this but if you cant be bothered with the mess then feel free to use melted butter.sprinkle over the sugar before adding the berries. Then it is ready for the oven and all of the prep work is done.
– Bake your berry dutch baby. Cooking this is done in 2 parts, first we roast the strawberries for 20 minutes. This, not only heats the butter to give the pancake a nice crispy edge but also gives the strawberries and amazing rich and sweet flavour. Secondly we bake the batter. You need to work quickly when you add the batter as a reduction in temperature will lessen the overall fluffyness. I do however feel a little swirl is always worth it. So once the batter has peen poured into your dish give the entire thing a little swirl with a spoon before returning it to the oven for the remaining 20 minutes.

Serve your strawberry Dutch baby immediately, once it is cooked. I like to sprinkle over a little bit of icing sugar and serve it with a rich vanilla yogurt and fresh berries if I have them on hand. While this is at its best fresh from the oven it is still delicious the next day. This recipe will bake enough for 4 small servings or 2 extra large portions. I like to double this recipe occasionally and if there are any leftovers they will store well in the fridge in an airtight container for 2-3 days.

- Preheat your oven to 170 degrees celcius.
- Place all of your batter ingredients into a blender.
- Blend the ingredients until smooth, the batter should be about the thickness of a pancake batter.
- Place your prepared batter into the fridge while you prepare your base.
- To prepare the base spread your butter evenly over a small, thick baking dish. I have use a dish that is approx 17 x 25 cm.
- Sprinkle the sugar evenly over the butter and then place your strawberries on top.
- Place into your preheated oven and bake for 20 minutes.
- Pour your prepared batter over your cooked berries in a rough zig zag pattern. Work quickly to give the butter and berries a little swirl and return the dish to the oven quickly.
- Bake for a further 25 minutes or until it is fully puffed and golden with darker crispy edges.
- Serve immediately dusted with icing sugar, yogurt and fresh sliced berries (optional).
