Plum Shortcake Scones

These sweet scones are unlike anything you have had before. A very simple recipe that involves no dicing, no rubbing butter into flour and is ready to eat in under an hour.

Why do so many of our favourite lunchtime treats involve rubbing butter into flour. Scones, cinnamon rolls, pastries, crumble. It is one of my least favourite parts of baking. So why not just skip it all together and that’s why I came up with this recipe. Simple tasty and the butter is melted so you just mix it through. These are buttery, flaky and have a fruity sweetness. So if you want fruity sweet scones with minimal effort, this is the recipe for you!

The most difficult part of this recipe is that at some point you will feel like you are shaping a ball of luncheon coloured playdough. It is very much a trust the process stage and if the color puts you off in any way then feel free to add in a few drops of food coloring. I promise this will be a delicious sweet and fruity scone and not some weird processed meat concoction.

Tips

Do not separate the scones when you cut them before baking. Scones can dry out so easily in the baking process, so I always recommend letting them bake in close proximity to each other. This also is just easier and gives a better result so win win all around.

Substitutions

Jam in scones– Feel free to swap out the plum jam for any other strongly flavoured jams.  We use raspberry, blackcurrant and three berry all of the time with great results. Whatever you have on hand should be fine.

Lemon icing – You can swap the jam in the icing for 2 teaspoons of lemon juice for a nice, tart lemon flavour. Add an extra tablespoon if icing sugar to account for the lesser volume.

Vanilla icing – Swap the jam for 1 teaspoon of vanilla essence and add in a tablespoon of icing sugar .

Storage

Store in a sealed container for up to 3 days. Heat these in the microwave for 30 seconds and they will be lovely for lunch the next day

Ingredients
  

Scones

  • 1 1/2 cup flour
  • 1 Tablespoon baking powder
  • 1/4 cup icing sugar
  • 80 g butter
  • 1/4 cup plum jam
  • 1/4 cup cream

Icing

  • 1 Tablespoon plum jam
  • 1/3 cup icing sugar
  • Hot water to mix

Instructions
 

  • Preheat your oven to 150 degrees (fan)
  • In a medium sized bowl combine the flour, baking powder and icing sugar
  • Use a microwave to melt the butter with the jam in a small cup or microwave safe bowl
  • Pour the melted butter and jam into your bowl of dry ingredients and then add in the cream
  • Mix all of your ingredients together until well combined
  • Turn out your dough and knead slightly to form a smooth ball
  • Crumple a piece baking paper large enough to line a regular sized cake pan
  • Place the dough in the centre of your baking paper and press out to form a disk slightly smaller than your cake pan
  • Cut the scone dough into 8 evenly sized wedges. Do not pull the sections apart. Lifting from the baking paper, place the prepared scones into your cake pan.
  • Bake for 35 minutes or until just cooked through
  • Remove the scones from the cake pan and run a knife along your cut lines to ensure they will come apart
  • In a small bowl, combine the jam, icing sugar and just enough water to create a runny icing
  • Drizzle the icing over the scones and serve immediately
