Plum Shortcake Scones

Ingredients
  

Scones
  • 1 1/2 cup flour
  • 1 Tablespoon baking powder
  • 1/4 cup icing sugar
  • 80 g butter
  • 1/4 cup plum jam
  • 1/4 cup cream
Icing
  • 1 Tablespoon plum jam
  • 1/3 cup icing sugar
  • Hot water to mix

Method
 

  1. Preheat your oven to 150 degrees (fan)
  2. In a medium sized bowl combine the flour, baking powder and icing sugar
  3. Use a microwave to melt the butter with the jam in a small cup or microwave safe bowl
  4. Pour the melted butter and jam into your bowl of dry ingredients and then add in the cream
  5. Mix all of your ingredients together until well combined
  6. Turn out your dough and knead slightly to form a smooth ball
  7. Crumple a piece baking paper large enough to line a regular sized cake pan
  8. Place the dough in the centre of your baking paper and press out to form a disk slightly smaller than your cake pan
  9. Cut the scone dough into 8 evenly sized wedges. Do not pull the sections apart. Lifting from the baking paper, place the prepared scones into your cake pan.
  10. Bake for 35 minutes or until just cooked through
  11. Remove the scones from the cake pan and run a knife along your cut lines to ensure they will come apart
  12. In a small bowl, combine the jam, icing sugar and just enough water to create a runny icing
  13. Drizzle the icing over the scones and serve immediately
