Rice Bubble Slice
Rice bubble slice is a kiwi classic!
Super simple to make, this rice bubble slice is crunchy, sweet and made with only 4 ingredients.

These are perfect for kids birthday parties, lunchboxes or a quick afternoon tea snack.
With only 4 ingredients and no baking required this recipe could not get any simpler.

For your rice bubble slice you will need…
Rice bubbles – Any brand will do the job here. Use a gluten free brand if you if you need to. You can use 4 heaped cups which equates to about 125 grams.
Butter – Regular salted butter works best here.
Sugar – I like to use white sugar for rice bubble slice as it lets the flavour of the honey show through. You could also use brown sugar for a more caramely flavour if that’s what you prefer.
Honey – Use whatever honey you would usually buy. Honey gives this slice its chewy toffee texture and also offers a delicious flavour boost.

Tips and tricks
- Make sure to cut your rice bubble slice 30 minutes after placing it into the fridge to set. Any longer and it will be very tough to cut and will crack (not that roughly shaped rice bubble slice is ever really a problem)
- For party themed rice bubble slice, sprinkle over 100s & 1000s just before you place your slice into this fridge.
- To avoid chopping your slice altogether you can scoop spoonfuls of the mixture into muffin cases and leave to set
- Store your slice in the fridge for up to 7 days for maximum crispyness
- Swap out 1 – 2 cups of the rice bubbles for any other cereal to create your own unique flavour combination.

Method
- Line a large baking dish with baking paper.
- Pour your rice bubbles into a large bowl.
- In a small saucepan, melt the butter together with honey and sugar on a medium heat.
- Simmer for about 2 minutes stirring occasionally.
- Pour your sugar syrup on top of the rice bubbles.
- Mix together quickly making sure to ensure the rice bubbles are evenly coated.
- Pour out in to your lined baking tray and spread out evenly.
- Place into the fridge for at least 30 minutes before cutting.
