Make your pancakes with just a few simple steps
Its super easy to make these fluffy, chocolaty pancakes!
- Firstly, prep your oven and pans
- Next, mix the dry ingredients together. Hot chocolate mix, icing sugar, flour and baking powder.
- Add the wet ingredients and whisk them through. Milk, egg vanilla and melted butter.
- Divide the batter into your pans and bake for 20 minutes.
- Load your pancakes up with whipped cream, syrup, sprinkles or any other toppings that you like.

Serving ideas
These are such a fun bake to customize and serve any way you want to!
This recipe will make 2 medium sized thick pancakes which can be stacked and served with whipped cream and sprinkles. This is my fo to method for decorating my hot chocolate baked pancakes! Try your favorite toppings or some of my other suggestions.
You can bake these as a large slab or sheet pan style pancake.
To serve your hot chocolate pancakes you could….
Keep it classic with maple syrup cream and bananas.
Go all in on the chocolate with chocolate hot fudge sauce and chocolate ice cream.
Spread a layer of caramel sauce on top and sprinkle over chopped peanuts.
Fresh fruit, whipped cream and jam makes another great option.
You can even sprinkle over chocolate chips, diced fruits or sprinkles just before baking.

Can you make these ahead of time?
Your baked pancakes should be made and eaten on the same day because these are at their best when they are served warm and fresh.
If you want to split the batch in half you could bake half and then store the remaining batter in the fridge in a sealed container for a day or two before baking the second half.

Method
- Preheat your oven to 160 degrees fan bake.
- Lightly grease 2 medium sized (approx 22cm diameter) cake pans and line the base with baking paper.
- Combine the hot chocolate mix, icing sugar, flour and baking powder together in a medium sized mixing bowl. Create a well in the center for your wet ingredients.
- Pour your milk, egg, vanilla and melted butter into the center of your dry ingredients. Use a whisk to slowly whisk the wet ingredients into the dry. Start in the center and work your way out, until you have a smooth, well combined batter.
- Pour your batter evenly between your 2 prepared cake pans.
- Bake for 20 minutes or until the pancakes are fully baked through.
- Allow to cool slightly before removing your pancakes from the pans and serving with whipped cream and sprinkles.
Notes
Store covered in the fridge and consume within a day of baking.
