I love turning a classic recipe into something fun and new. And this is no exception! Changing the icing and adding some mini eggs turns this familiar recipe into an Easter superstar.

Weetbix slice is one of those recipes that that is great for afternoon tea, filling lunchboxes and sharing with family and friends. Make this speckled egg version for Easter!

The layers in this speckled egg slice

  • Weet-bix slice base. A delicious, lightly chocolate base that is speckled with crisp crumbles of weetbix and coconut. This base is a soft but firm baked layer.
  • Speckled egg icing. A green or blue tinted vanilla icing that is speckled thought. The speckles come from crushed oreo biscuits and work perfectly to give off that speckled egg effect.
  • Decorate with speckled eggs. The mini speckled eggs look perfect on top of this slice. Feel free to decorate with any type of mini Easter eggs that you like through.

Tips and tricks

– Use this icing to decorate other baked goodies for Easter too. Double the speckled icing mixture to decorate a large cake, cupcakes, fill sandwich cookies, you could even use it on top of these chocolate scrolls.

– This recipe is perfect for using up the leftover crumbs at the end of your packet of weetbix. You will need approx 3/4 cup of crushed wheetbix.

– Alternatively if you do not have any weetbix on hand you can use crushed biscuits, cornflakes, nuts or even oats in their place. You will need 3/4 cups of whatever substitute you choose.

– Keep your knife clean when making your cuts. This slice is a little bit on the crumbly side so those crumbles can tend to transfer into your icing if you are making multiple slices. Wipe your knife between slices to keep your edges crisp and tidy.

Ingredients
  

Base
  • 3 crushed weetbix
  • 1 cup coconut
  • 1 cup flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 2 Tbs cocoa
  • 150 grams butter melted
  • 1 egg
Speckled icing
  • 50 g butter softened
  • 1 tablespoon boiling water
  • 1 1/2 cup icing sugar
  • 2 teaspoons vanilla essence
  • A few drops of food coloring green or blue
  • 2 oreo biscuits 1 heaped tablespoon when crushed

Method
 

Slice base
  1. Preheat your oven to 170 degrees fan forced.
  2. Line a square 25cm slice tin or cake pan.
  3. Place weetbix, coconut, flour, sugar, baking powder and cocoa into a large bowl. Mix well to combine
  4. Add your melted butter and egg to your dry ingredients and mix until everything has combined.
  5. Press the mixture into your prepared baking tray and bake for 20 minutes or until firm.
  6. Cool fully before preparing your icing
  7. Cut into 12 pieces once fully set
Speckled icing
  1. Place your oreo biscuits into a small snap lock bag. Use a rolling pin to roughly crush your biscuit.
  2. Next, combine the butter and water with 1/2 cup of the icing sugar. Mix well until the mixture is smooth.
  3. Add in the remaining icing sugar, vanilla and food coloring mix well until the mixture is smooth.
  4. Place a heaped spoonful of your crushed oreos into your icing mixture. Use a spatula to gently fold the oreos through your icing until it is speckled evenly through.
  5. Spread your icing evenly over your cooled slice base and decorate with speckled eggs.
  6. Chill for 30 minutes before slicing and serving.

Store covered, in a cool dry place for up to 5 days
