Method
Slice base
- Preheat your oven to 170 degrees fan forced.
- Line a square 25cm slice tin or cake pan.
- Place weetbix, coconut, flour, sugar, baking powder and cocoa into a large bowl. Mix well to combine
- Add your melted butter and egg to your dry ingredients and mix until everything has combined.
- Press the mixture into your prepared baking tray and bake for 20 minutes or until firm.
- Cool fully before preparing your icing
- Cut into 12 pieces once fully set
Speckled icing
- Place your oreo biscuits into a small snap lock bag. Use a rolling pin to roughly crush your biscuit.
- Next, combine the butter and water with 1/2 cup of the icing sugar. Mix well until the mixture is smooth.
- Add in the remaining icing sugar, vanilla and food coloring mix well until the mixture is smooth.
- Place a heaped spoonful of your crushed oreos into your icing mixture. Use a spatula to gently fold the oreos through your icing until it is speckled evenly through.
- Spread your icing evenly over your cooled slice base and decorate with speckled eggs.
- Chill for 30 minutes before slicing and serving.
