Perfect Pepperoni Pizza Pinwheels

This recipe combines all the great things about pizza and turns it into a quick grab and go option for lunches.

Using a simple scone dough instead of a yeast based bread dough makes these pizza pinwheels soft and flaky. This also means that they can be made, baked and on the table in under an hour.

Not only is this recipe extremely easy to make, its also able to be customized too. You can load these pinwheels with your favorite pizza fillings, perfect for when you have picky eaters. You can even make a big batch of these pizza pinwheels, wrap them up in individual servings and freeze them. Perfect for a quick and easy lunch option during a busy week.

Ingredients

Pepperoni – Very thinly sliced pepperoni works best for this recipe. You can use a thicker pepperoni or salami but you will end up using more than the recommended amount.

BBQ Sauce – Use whatever sauce you like we often use a spicy BBQ sauce for extra flavor but regular works well too. Swap the BBQ sauce for tomato paste, or sauce if you prefer a tomato base on your pepperoni pinwheels.

Cheese – Use a firm grateable cheese like Colby, cheddar or Edam to go on top of your pinwheels.

Red onion – A little sprinkle of diced red onion is an optional extra. Feel free to add some other fillings that you would usually add to your pizza here instead.

Butter – Use very cold salted butter. This will be grated and rubbed into your flour to create the scones soft crumbly texture.

Other household staples – Milk, plain white all purpose flour, white granulated sugar, baking powder and salt.

Some other filling options

This recipe uses a simple scone style base to create delicious pepperoni pizza flavored pinwheels. The great thing about that is that is is super easy to change out the flavors to create your own favorite flavor combos. Simply swap out the fillings and create something new.

Here are some ideas to get you started.

Hawaiian – Tomato paste base, diced ham and pineapple chunks.

Meat-lovers – BBQ sauce with sausage, salami bacon and mini meatballs.

Sweet chilli chicken – Cream cheese, sweet chilli sauce and shredded chicken.

Simple cheese – Keep it simple with a tomato base and cheese topping

Garlic bread – Fill your scones with melted butter, garlic and mixed herbs.

Some handy tricky for cutting your pepperoni pizza pinwheels

When you cut out your pinwheels make sure that the seam of the rolled dough is down towards your work surface. This will stop the dough from coming undone as you work.

Use a serrated knife to cut through your dough in a sawing motion. This way none of the fillings will tear through your dough as you cut.

To create a guide for cutting, you can lightly score the surface of the dough at the center and quarter points. Now you can divide each quarter into 3 with less guess work. This will help you cut your pinwheels into 12 even pieces more easily.

If you want to stretch your pinwheels a little bit further you can cut the roll into 16 pieces instead of 12. They will be a little thinner so bake for about 25 minutes instead of 30.

If your pinwheels come out a little bit tall and narrow. Place the cut pieces onto your tray with a little bit of space between them. Then use the palm of your hand to lightly press each one down until each one stands 2-3cm tall.

Ingredients
  

Scone dough
  • 60 g cold butter grated
  • 450 g flour
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 5 teaspoons baking powder
  • 1 cup milk
Fillings and toppings
  • 1/3 cup BBQ sauce
  • 2 tablespoons red onion finely diced
  • 100 g packet thinly sliced pepperoni
  • Milk or cream for brushing on scones before baking
  • 1 cup grated cheese

Method
 

  1. Preheat the oven to 160 degrees, fan bake and line a baking tray with baking paper.
  2. In a large bowl, rub the butter into your flour until the mixture resembles coarse breadcrumbs.
  3. Add in the baking powder, salt and sugar, then give everything a quick stir to combine the ingredients.
  4. Pour in your milk and mix well, until it is roughly combined.
  5. Turn the dough out onto a floured surface. Use your hands the bring the mixture together to form an even ball of dough.
  6. Roll your dough into a large rectangle that is around about 35x25cm. Spread the BBQ sauce evenly over the entire surface of your scone dough. Next sprinkle over the red onions. Lay the pepperoni slices evenly on top making sure that they are evenly spread and reaching both edges.
  7. Now it is time to roll up the dough. To do this take one of the long edges of the dough and fold it over about 3 cm. Use this edge as the start of your rolling and continue to roll the dough until you have a rolled log. Take extra care to tuck in and fillings that may want to shift as you are rolling.
  8. Use a serrated knife to cut your pinwheels into sections. The best way to do this is to first trim the rough ends of the dough. Then lightly score the surface of the dough at the center and quarter points. Now you can divide each quarter into 3 with less guess work. Cut your pinwheels into 12 even pieces and transfer them into your prepared baking dish spiral side up.
  9. Brush the pinwheels with a little bit of milk or cream
  10. Bake in your preheated oven for 10 minutes before sprinkling your cheese on top. Continue baking for a further 20 minutes or until the cheese on top is golden and the scones are baked through.
  11. Serve your pinwheels warm or cold.

Notes

Store any leftover pinwheel scones in the fridge, covered for up to 4 days.
These pizza pinwheel scones can also be frozen. Wrap your cooled pinwheels in clingfilm in individual servings and place into the freezer to freeze. Allow to defrost fully before warming in the oven or microwave these from frozen for 2 minutes.
