One of the most fun parts of making French toast is deciding what to top them with! The options are endless. The baguette french toast that I have made today is covered in a sprinkling of icing sugar first and then drizzled with freshly melted milk chocolate. Add a generous dollop of whipped cream and fresh sliced strawberries and bananas are then loaded on top to finish it off. Delicious!

How long do you need to soak the bread in the liquid?

About 30 seconds to 1 minute on each side should be about perfect. I like to place my next batch of breads into my mixed eggs to soak straight after transferring the previous ones into my frying pan. When you flip your cooking french toast you will also flip the soaking bread. This gives every slice the same amount of soaking time and guarantees that your French toast will be consistent from first to last.

Breads to use for French toast.

Baguettes, brioche, sour dough, plain white, ciabatta, even criossants are great.  French toast is the prefect solution to use up day old bread. Its also totally worth buying a special loaf just for the occasion. I have used baguettes for beautiful bite sized pieces here.

The key to achieving the best French toast, that is soft and fluffy on the inside, is to use a bread that is cut thick. No thin sandwich slices for this recipe. I also find the pre-sliced breads just don’t get as good of a result as they tend to not absorb as much of the egg mixture. Use a serrated knife to cut your baguette (or other bread choice) and cut the slices to be about 2-3 cm thick for the best result.

Other substitutions

Sugar – I always use brown sugar for my French toast. I feel like it boosts that caramelized flavour when it hits the frying pan. It also helps the bread get that lovely golden colour quickly. Any sugar will do but brown sugar is definitely the best option.

Eggs – Eggs are probably the one ingredient that cannot be substituted. Make sure they are well mixed into your milk, you definitely do not want any stringy bits. If you like your French toast a little more on the eggy side you can increase the eggs up to 3.

Milk – Any milk that you have on hand will work fine for this recipe. Usually the fattier the milk is, the better your result will turn out. If you need it dairy free then feel free to switch it for you’re your favourite dairy free alternatives. I have used oat milk and soy milk for this in the past and they both turned out great!

Flavouring – Vanilla is always a winner here. I use vanilla essance but vanilla extract is always a treat! Add a bit of cinnamon here if you like. You can even add in a hint of almond essence or lemon zest for a different flavour boost.
