Banana Oat Loaf – With Chocolate Chips
Not all banana breads need to be healthy right! This recipe is a banana bread that balances oats with chocolate chips to make a baking masterpiece. This banana oat loaf is delicious served warm, packed into lunchboxes or toasted up for breakfast.

Whether you brought too many, got a great deal at the supermarket or if the kids suddenly decided that they are not fans of bananas this week, this recipe will save those bananas from the bin.
Once bananas start to brown they automatically become baking bananas in our house.

- Made with simple ingredients. Other than the bananas and chocolate chips (which are optional) all of the other ingredients are simple things that you probably have in your pantry already!
- Two loaves for the effort of one. This recipe is baked in 2 small loaf tins that are about 9cm x 22cm. That makes this recipe perfect to have one now and one to share or store for later.
- Works for many meals. This is not only perfect freshly baked for afternoon tea, but it is also great toasted for breakfast, packed into lunchboxes or served up warm with some chocolate hot fudge sauce for dessert.
- Its stores well in the freezer. This recipe makes 2 small loaves so why not make one for now and one for the freezer!
- Its really easy to make. Mash some bananas and mix everything together in one bowl. Its really is that easy.

Ingredients
Bananas – Use 3 large, very ripe bananas that have turned brown. Lots of dark brown coloring is a good indicator that they are ready. You need about 1 1/3 cups of mashed banana.
Oats – Use the porridge style quick oats for the best results. If you have the larger type you can give it a quick pulse in a blender to make your oats smaller for use.
Chocolate chips – Use small dark chocolate chips for this loaf recipe. Butter – I like to use salted butter, but any type is fine. You can also use margarine if your budget is tight.
Brown sugar – Brown sugar adds to the richness of this loaf. You can swap this out for plain white sugar if you like.
Milk – Use whatever milk you keep on hand. Light milk, full fat, oat or soy have all been tested and work well for this recipe.
Eggs – 2 large size 7 eggs. If you are dairy free / vegan you could swap this out for one additional large mashed banana. Add an extra tablespoon of dairy free milk if yo make this substitution.
Pantry basics – Plain white flour, vanilla essence, baking powder and baking soda.

- Preheat your oven to 160 degrees, fan bake.
- Prepare your 2 loaf tins by greasing and lining them with baking paper.
- In a large bowl combine the butter and sugar. Mix well until the mixture is smooth and light.
- Add in your eggs one at a time, mixing well to incorporate them into the mixture.
- Mash your bananas. Peel the bananas, place them onto a plate and then use the back of a fork to mash them well. Add your mashed bananas to your bowl with your vanilla essence and mix through.
- Add all of the remaining ingredients and mix together until everything has just combined.
- Pour the batter evenly between your prepared loaf tins and bake for 40 minutes or until they are fully cooked through.
- Remove your banana oat loaves from oven and cool for at least one hour.
- Slice and serve your banana oat loaf with butter, chocolate spread or maple syrup.
