Method
- Preheat your oven to 160 degrees, fan bake.
- Prepare your 2 loaf tins by greasing and lining them with baking paper.
- In a large bowl combine the butter and sugar. Mix well until the mixture is smooth and light.
- Add in your eggs one at a time, mixing well to incorporate them into the mixture.
- Mash your bananas. Peel the bananas, place them onto a plate and then use the back of a fork to mash them well. Add your mashed bananas to your bowl with your vanilla essence and mix through.
- Add all of the remaining ingredients and mix together until everything has just combined.
- Pour the batter evenly between your prepared loaf tins and bake for 40 minutes or until they are fully cooked through.
- Remove your banana oat loaves from oven and cool for at least one hour.
- Slice and serve your banana oat loaf with butter, chocolate spread or maple syrup.
Notes
Use 2 small loaf tins that are about 9cm x 22cm
Store your loaf covered, in a cool dry place for up to 5 days.
Freeze your loaf whole or in pre-cut slices for up to 3 months. Make sure to wrap your banana oat loaf well with cling film or tin foil if you are freezing it.
