Banana Oat Loaf - With Chocolate Chips

Not all banana breads need to be healthy right! This recipe is a banana bread that balances oats with chocolate chips to make a baking masterpiece. This banana oat loaf is delicious served warm, packed into lunchboxes or toasted up for breakfast.

Ingredients
  

  • 150 g butter softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 cup oats porridge style
  • 3 large bananas
  • 2 cups flour
  • 1/2 cup milk
  • 3/4 cup chocolate chips
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons vanilla essence

Method
 

  1. Preheat your oven to 160 degrees, fan bake.
  2. Prepare your 2 loaf tins by greasing and lining them with baking paper.
  3. In a large bowl combine the butter and sugar. Mix well until the mixture is smooth and light.
  4. Add in your eggs one at a time, mixing well to incorporate them into the mixture.
  5. Mash your bananas. Peel the bananas, place them onto a plate and then use the back of a fork to mash them well. Add your mashed bananas to your bowl with your vanilla essence and mix through.
  6. Add all of the remaining ingredients and mix together until everything has just combined.
  7. Pour the batter evenly between your prepared loaf tins and bake for 40 minutes or until they are fully cooked through.
  8. Remove your banana oat loaves from oven and cool for at least one hour.
  9. Slice and serve your banana oat loaf with butter, chocolate spread or maple syrup.

Notes

Use 2 small loaf tins that are about 9cm x 22cm
Store your loaf covered, in a cool dry place for up to 5 days.
Freeze your loaf whole or in pre-cut slices for up to 3 months. Make sure to wrap your banana oat loaf well with cling film or tin foil if you are freezing it.
