Chocolate Impossible Pie
An easy recipe that combines chocolate, custard and a little bit of baking magic. Just one simple batter will create 3 wonderful layers in this super simple chocolate impossible pie.

What is an impossible pie?
An impossible pie is a custard style pie that has 3 magically forming layers. All of your ingredients are blitzed together until smooth then poured into a baking pan and baked. The magic happens in the oven where a light base forms, the custard sets through the middle and a light flaky layer settles on top.

The easiest pie you can make
Not only is this pie a little bit magical, but it might just be the easiest pie to make ever!
There is no crust to make, no chocolate to temper, no custard to carefully heat. Simply blend, pour and bake.
The other great thing about this recipe is that you probably already have everything to make this already in your house. Give it a try, it couldn’t be any easier.

- Whisk together eggs, butter, milk, sugar, vanilla essence, flour and cocoa until smooth
- Pour into a lined/greased baking dish and bake at 170 degrees for 50 minutes.
- Allow it to cool and then serve



Some helpful tips and tricks
Make sure that you use a dish that will not leak.
This pie has an extremely wet batter so any leaks will most likely lead to a big mess in your kitchen. A solid glass or metal cake or pie dish is a great option. Do not use a spring form tin or a pie dish with a removable bottom.
Making an impossible pie with a blender.
You can also make your impossible pie with a large blender or immersion blender. Simply blitz everything together until smooth. Make sure that you blend everything until it has just become smooth, sieve if necessary to remove any lingering lumps.
Remove any lumps
Sometimes your batter may end up a little bit on the lumpy side. Simply sieve your batter, give it an extra stir and then bake. To avoid lumps when blending, make sure that you add the wet ingredients to your bowl before adding the dry ingredients.

Serving suggestions
Serve your pie warm or cold with your choice of toppings. Whipped cream, a sprinkle of icing sugar, homemade ice cream or chocolate sauce are all great options Store any leftovers in the fridge for up to 3 days.

- Preheat your oven to 160 degrees fan bake.
- Grease and line a large pan with baking paper.
- Place all of your ingredients into a large bowl.
- Place all of your ingredients together in a large bowl
- Whisk all of your ingredients together until your mixture is well combined and completely smooth. Sieve your mixture if any lumps linger.
- Pour into your prepared dish and bake for 45-50 minutes. The top will be lightly golden and the pie will jiggle slightly and appear to be almost set when it is done.
- Cool slightly, allowing it to finish setting up before serving. This should take 30-60 minutes.
