Chocolate Yogurt Cake

This chocolate cake is incredibly moist, deliciously chocolate flavored and is an absolute favorite for anyone who tries it. Chocolate yogurt cake is super easy to make, low fuss and perfect for any occasion!

What makes this cake so great

  • Its rich chocolaty flavor cannot be beat. Ice this cake with a delicious chocolate icing or ganache for the ultimate chocolate lovers treat.
  • Yogurt is such a great addition to this cake. It is great for making it soft, moist and absolutely divine. I like to make this cake whenever I have yogurt in the fridge that needs using up.
  • This cake is the perfect cake for any occasion. This recipe has been used for more birthday cakes than I can count. You can serve your cake as a dessert, afternoon tea of use it an a sweet treat in lunchboxes too.
  • It can be baked as a large slab cake like I have here or in 2 round cake pans (approx 22cm) for a tall tiered cake.
  • This is one of the most easy to make cakes ever!

A quick and easy chocolate cake

Simply mix your sieved, dry ingredients in a large bowl, mix through your wet ingredients and bake in a lined baking tray. That’s it!

No need for fancy mixers, no fussy steps and a delicious result every time.

Ingredients

Cocoa – Use whatever unsweetened cocoa powder that you have on hand for this recipe.

Yogurt – Vanilla yogurt is a great base for this cake. But you can definitely use whatever you have on hand. If you use a fruit or flavored yogurt just make sure that it has no lumps.

Coffee – Coffee is great for boosting the flavor of chocolate in chocolate cake. I like to use an instant coffee sachet but any coffee that you like will do. While the coffee flavor does not come through you can trade it out for a cup of hot water, hot chocolate or tea if you want to.

Eggs – 3 large eggs, size 7 is the size that I usually use.

Oil – Use a plain flavorless oil like canola or sun flour oil.

Sugar – Plain white granulated sugar.

Flour – Plain white all purpose flour. This recipe will also work with a 1:1 ratio gluten free substitute too.

Baking powder, baking soda and salt.

Super simple chocolate icing

For a fuss free chocolate cake, you need a fuss free chocolate icing.

While beautiful buttercream decorations or a rich ganache is great on this cake. Sometimes you just want something that is quick, easy and fool proof just like this chocolate yogurt cake.

Combine 50g butter (softened or melted) with 3 tablespoons of cocoa and 2 tablespoons of boiling water.

Next add 2 teaspoons of vanilla essence and mix through.

Gradually add 1 1/2 cups of icing sugar, mixing constantly.

Spread over your cooled chocolate cake and serve.

Servings: 12 pieces

Ingredients
  

  • 2 cups sugar
  • 3/4 cup cocoa
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 eggs
  • 1 cup vanilla yogurt
  • 1 cup hot coffee
  • 1/2 cup oil
  • 2 tsp vanilla essence

Method
 

  1. Preheat your oven to 160 degrees, fan forced and line a large cake tin with baking paper.
  2. In a large bowl sieve and mix together the dry ingredients until well combined.
  3. Make a well in the middle of your dry ingredients.
  4. Pour the wet ingredients into the center of the bowl and begin to mix together using an electric whisk. Start by mixing in the very center, mostly mixing the wet ingredients. Then slowly work your way outwards until everything is very well combined.
  5. Pour the mixture into your prepared cake pan and bake for 35-40 minutes or until baked through.
  6. When the cake is fully cooled ice with a chocolate icing or ganache.

Notes

Store, covered in a cool dry place for up to 5 days
To freeze, wrap your cake firmly in 2 layers of cling film. Store in the freezer for up to 3 months.
