Giant Chocolate Chip Cookie For Two

Do you every just have the want to eat chocolate chip cookies straight out of the oven? But you don’t want to wait for butter to soften, roll out 24 even sized cookie balls and chill for half an hour before baking in batches and having thin floppy cookies that don’t quite fill that cookie urge? Then this is the recipe for you!
This recipe can have a giant fudgy cookie on your plate in around half an hour. I came up with this recipe because I wanted to have a quick and easy recipe that would turn a cookie into a full dessert.

Tips
- Eat this cookie as soon as it is finished baking. It will be firm enough to transfer to a plate as soon as it comes out of the oven so there is no excuse to wait. Also these cookies do harden a bit once they do cool down so they will not be as delectable as when they are fresh.
- Serve with cream of ice cream and even some chocolate sauce if you really want a decadent treat.
- This recipe makes two large cookies that are the a great size for dessert. This recipe is easily doubled to make enough for 4 cookies.
- You can also reduce the size of the cookies slightly buy dividing into 3 cookies at the shaping stage. If you do this then reduce the cooking time down to 12 minutes.
- It is very important to make sure that the oven is not too hot. These are baked at a lower temperature to keep them soft and fudgy if the temperature is too high then the cookies will be much harder even if cooking for a shorter time.
Ingredients / Substitutions
Chocolate chips – if you would like to use a different chocolate just make sure that it is a small sized chip or chop it down into smaller sized pieces. This recipe works best with smaller pieces of chocolate.
Butter – I use salted butter for this recipe, if you use unsalted just add in an extra pinch of salt.
Cornflour- The cornflour in this recipe is important as it is what makes the cookies stable when they are coming straight from the oven. It also adds to the fudgy insides that this cookie has. You can subsitiute this with arrowroot powder if you like but I do not recommend substituting for regular flour.

- Preheat your oven to 150 degrees fan forced and line a small baking tray with baking paper.
- In a small bowl, combine together the melted butter, brown sugar and vanilla.
- Add in the remaining ingredients and mix together. The mixture will be a little bit crumbly and rough.
- Turn the mixture out onto a clean benchtop and use your hands to bring the dough together a little better.
- Seperate the mixture in half and form into two balls. Press slightly and shape into disks about 1.5-2cm thick.
- Place the formed cookies onto your prepared baking tray.
- Bake for 18 minutes or until the edges are golden.
