Lemon Blueberry Muffins

With bursts of blueberries and an overall lemony flavour these lemon blueberry muffins are a delicious afternoon tea treat. This recipe will give you a dozen easy to make muffins.

This is one of those recipes that you can make with minimal prep work and is so great to eat fresh out of the oven with minimal fuss.

Frozen blueberries, lemon zest and juice, eggs, milk, sugar, flour and baking powder is all you will need to make these for yourself.

This recipe follows a simple method.

– Cream together butter

– Add eggs and mix thoroughly

– Mix through the milk, lemon zest and juice, flour and baking powder

– Fold through the frozen blueberries

– Spoon into a lined muffin tray and bake in a preheated oven for 25 minutes

Should I use fresh or frozen blueberries

While either is a good option, for this recipe I recommend using frozen blueberries.

This recipe is designed to be made using frozen blueberries. It has a lower cooking temperature and is made using a thicker batter. This will help the muffins absorb some of the excess moisture that your blueberries will release during the cooking process. It will also stop the blueberries from sinking to the bottom as your muffins bake.

Do not defrost your blueberries before adding them to your batter.

Mix them through gently and if you really want them blueberry loaded dot the tops with a few extra blueberries before baking!

How to serve your lemon blueberry muffins

There are a few ways that I like to serve these berry delicious muffins.

Warm – slice the freshly baked muffins in half and spread over a little bit of butter or lemon curd

Iced – A thin icing or lemon glaze is the perfect sweet topper for these muffins. Mix half a cup of icing sugar with a tablespoon of lemon juice. Add a little bit of water or milk to the mixture to make a thin pourable icing. Lightly drizzle the icing on top of the cooled muffins and leave for an hour or two to set

Sugar frosted -Sprinkle over a teaspoon of sugar on top of each muffin before placing them into the oven. This will give the muffins a sweet and crispy topping.

Servings: 12 small muffins

Ingredients
  

  • 100 grams butter softened
  • 2/3 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • Zest of 1 large lemon
  • Juice of 1/2 lemon
  • 1 1/2 cup flour
  • 1 1/2 teaspoons baking powder
  • 125 grams frozen blueberries

Method
 

  1. Preheat your oven to 160 degrees and line your muffin tray with paper cases
  2. In a medium sized bowl, cream your butter and sugar together
  3. Mix your eggs through one at a time. Mix until well combined.
  4. Add everything except your blueberries into your bowl and mix till just combined.
  5. Fold through the blueberries until they are roughly speckled thought
  6. Scoop your batter into muffin cases and bake for 25 minutes or until they are golden on top and cooked through

Notes

Store in a cool dry place for up to 5 days
