Spiced Oat Biscuits – April fools dog biscuit prank
These tasty spiced oat biscuits unfortunately resemble dog biscuits when you cut them into triangles. But hey, lets roll with that and make a delicious snack to dip in your cup of tea this April fools afternoon

Story time
When I first came up with this recipe, I wanted a good tea dunking biscuit that had a hint of honey and spiced flavors. I also wanted to use my triangle cookie cutter that I had never seemed to find a use for before. Maybe it was a lack of sleep or just a lack of thinking but it wasn’t until they came out of the oven that I realized just how much they resembled dog biscuits! Anyway, I benched the thought, iced the cookies with an vanilla royal icing and carried on with my day. However tomorrow is April fools day and it is time for this recipe to come out and it is these cookies time to shine!

How to dog biscuit-ify these cookies
Triangle cookie cutters – Any size would do. I have used one that is 6.5 cm along each edge. If you do not have a triangle cutter or if you want yours to be a specific size then you can cut them to shape. I find it easier to cut out a guide from a piece of baking paper first. Then use a clean ruler and small sharp knife to cut out the shape.
Indents – I chose to mark mine with the words April fools on mine. My kids are taking theirs to school tomorrow to gross out their friends and I definitely want it to be clear that they aren’t actually dog biscuits. If you want to fully commit to the illusion then go for TUX of WOOF to get a good laugh. I used letter stamps for my lettering. If you do not have any then you can get a pretty good result by using a toothpick to write into the surface. If you mess up, just flip the cookie and try again on the other side.
Serving – I recommend serving these in a new (or very clean) dog bowl for some extra April fools goodness. These are great to serve alongside a cup of tea. Dunk it in your tea and declair that you ran out of people biscuits before offering to others.

Storage
Store these in an airtight container for up to one week
This cookie dough is great for freezing. To freeze, lay uncooked cut cookies in two – three layers on a baking sheet. Separate layers with baking paper. Place in the freezer for 2 hours before transferring the frozen dough into a snap lock bag. Bake from frozen, increasing the cook time by 2 minutes.

Ingredients
Method
- In a small saucepan melt the butter and sugar. Heat on low until the sugar is dissolved. Allow the mixture to cool slightly.
- Use a food processor to blitz the oats to form a course flour.
- In a large bowl combine the oats, flour, baking soda and spices. Mix together well to combine.
- Add the yolks, vanilla and sugar syrup to your bowl. The ingredients together gently, until the ingredients are just combined.
- Form the dough into a thick rectangle and cover with cling film and place it into the fridge for 30 minutes to chill.
- Preheat oven to 150 degrees fan (or 170 degrees regular)
- Roll out your dough (using a little icing sugar to powdery your bench) to approx 1.5 cm thick. Using a triangle cutter, cut out as many cookies as you can, reforming the dough and rolling out as often as needed.
- Place cookies onto lined baking trays leaving about 1cm space between them. Stamp your chosen markings onto the cookies before placing the trays into the oven.
- Bake for 10 minutes or until the edges are golden
- Let cool and then enjoy. Makes plenty to share or eat them all yourself
