Spiced Oat Biscuits

Ingredients
  

  • 150 grams butter
  • 1 cup brown sugar
  • 2 Tbs honey
  • 1 cup oats
  • 1 1/2 cup flour
  • 1/2 teaspoons baking soda
  • 1 tablespoon mixed spice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 2 egg yolks
  • 1 teacpoon vanilla essance

Method
 

  1. In a small saucepan melt the butter and sugar. Heat on low until the sugar is dissolved. Allow the mixture to cool slightly.
  2. Use a food processor to blitz the oats to form a course flour.
  3. In a large bowl combine the oats, flour, baking soda and spices. Mix together well to combine.
  4. Add the yolks, vanilla and sugar syrup to your bowl. The ingredients together gently, until the ingredients are just combined.
  5. Form the dough into a thick rectangle and cover with cling film and place it into the fridge for 30 minutes to chill.
  6. Preheat oven to 150 degrees fan (or 170 degrees regular)
  7. Roll out your dough (using a little icing sugar to powdery your bench) to approx 1.5 cm thick. Using a triangle cutter, cut out as many cookies as you can, reforming the dough and rolling out as often as needed.
  8. Place cookies onto lined baking trays leaving about 1cm space between them. Stamp your chosen markings onto the cookies before placing the trays into the oven.
  9. Bake for 10 minutes or until the edges are golden
  10. Let cool and then enjoy. Makes plenty to share or eat them all yourself
