Warm Spiced Vanilla Cake

The perfect cake for cinnamon lovers

Cinnamon is always a winner in our house! Cinnamon rolls and cinnamon donuts are some of the most frequent things that I end up making for my family. But sometimes it is nice to get that wonderful, warming cinnamon spice flavor but without as much hands on work. This Spiced vanilla cake requires very little effort at all. Vanilla shines through in this cake recipe which pairs so well with the cinnamon flavor that that is swirled through. This cake is the perfect cozy, spiced afternoon tea treat after a long day. Kick your feet up and enjoy a warm slice of spiced vanilla cake with a cup of your favorite tea or coffee.

Ingredients

Spices – Cinnamon and nutmeg together create the perfect cozy spice pairing for this cake.

Sugar – You will use white granulated sugar in the cinnamon sugar and cake. Then icing sugar will be used in the glaze.

Butter – You can use either butter or margarine for this recipe. If you use margarine or an unsalted butter, you may want to add a little extra salt.

Vanilla – Use either vanilla essence or extract. I like to use essence in the cake as it is baked and extract in the glaze.

Milk – Regular full fat or light milk will work well in this recipe.  Oat or soy milk will also work well here.

Egg – This recipe uses only one whole egg. If you have any leftover egg whites  (I always have a bunch in my freezer from making homemade ice cream) you can use 2 egg whites in place of the whole egg.

Flour – Plain white all purpose flour.

Baking powder – To help your cake rise.

Salt – To balance out the sweetness.

Tips and tricks for the perfect spiced vanilla cake

How to create your cinnamon ripples. Pour 1/2 of the cake batter into your cake pan. Sprinkle 1/2 of the sugar mixture over the top and then repeat with the remaining batter and sugar mix. Using the handle of a spoon make large swirls all through the cake. I like to do a zigzag swirl in one direction and then repeat in the other direction to ensure its well distributed.

Add as much cinnamon as you like. This recipe has a pretty balanced cinnamon flavor, but if you like your spices strong, feel free to add a little bit more.

Reheating your spiced vanilla cake. This cake is still delicious cold but it really shines when it is warm. Reheat individual slices of your cake in the microwave, about 30-40 seconds will have your cake perfectly warm again.

Store your cake when it has cooled completely. Wrap firmly with cling film or place it into a sealed container. Place your cake in a cool dry place and store for up to 5 days (if it lasts that long)

Some other cake ideas

 – Leave the glaze of and allow your cake to cool fully. Then decorate with your favorite frosting for a simple spiced birthday cake.

– Use a milkshake powder, like nesquick, to sprinkle into your cake batter in place of the cinnamon sugar. Swirl it through and bake. You can add a tablespoon of the mixture to the glaze as well to color and flavor the glaze.

– Play around with the spices. Ginger and mixed spice would be a great combo so would orange zest and allspice.

Ingredients
  

Cinnamon sugar
  • 1/3 cup sugar
  • 2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
Cake base
  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 125 g butter melted
  • 1 cup milk
  • 1 egg
  • 1 tablespoon vanilla essence
Glaze
  • 1/2 cup icing sugar
  • 1 tablespoons milk
  • 1 teaspoon vanilla essence

Method
 

  1. Preheat your oven to 160 degrees Celsius, fan bake.
  2. Grease and line a 23cm round cake pan
  3. Prepare your cinnamon sugar. Place the sugar, cinnamon and nutmeg in a small bowl or cup. Mix well to combine. Set your cinnamon sugar aside while you prepare your cake.
  4. Add the flour, sugar, baking powder and salt to a large mixing bowl. Mix well and then create a well in the centre to add your wet ingredients.
  5. Pour your melted butter, milk, egg and vanilla into the well at the center of your mixing bowl.
  6. Use an electric beater to mix your wet batter together. Start in the center of the bowl and slowly work in the dry ingredients until everything is just combined.
  7. Pour 1/2 of the cake batter into your cake pan. Sprinkle 1/2 of the sugar mixture over the top and then repeat with the remaining batter and sugar mix. Using the handle of a spoon make large swirls all through the cake. I like to do a zig-zag swirl in one direction and then repeat in the other direction to ensure its well distributed.
  8. Cover cake with a piece of tin foil and bake for 25 minutes. Remove the foil and bake for a further 20 minutes or until the cake is cooked through fully. You can insert a toothpick to check, if it comes out clean then your cake is done.
  9. Remove your cake from the oven and allow it to cook slightly while you prepare your glaze.
  10. Combine the icing sugar, milk and vanilla essence. Mix well, until the mixture is a thick drizzling consistency.
  11. Remove your cake from the pan and place it onto a cake plate or serving dish.
  12. Drizzle your glaze all over the surface of your cake before slicing and serving.
