Apricot and Orange Muesli Bars - with a chocolate drizzle

If you want a muesli bar that is packed with oats, chewy apricots, crispy walnuts and orange flavor and then … drizzled in a generous amount of dark chocolate, then this is the recipe for you! These apricot and orange muesli bars are easy to make and will be the perfect addition to your snack times

Ingredients
  

  • Zest of one orange
  • 1/4 cup orange juice
  • 2/3 cups dried apricots roughly diced
  • 2 cups rolled oats
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 cup diced walnuts
  • 125 g butter
  • 1/2 cup brown sugar
  • 1 egg
  • 150 g dark chocolate

Method
 

  1. Preheat your oven to 160 degrees fan bake.
  2. Line a large baking tin with baking paper and set aside.
  3. Place the orange zest and juice into a small microwave safe cup or bowl. Microwave for 45 seconds and then set aside to allow the apricots to soften for 10 minutes.
  4. In a large bowl combine the oats, flour, baking powder and walnuts
  5. Place the butter and sugar into a small saucepan and heat over a low temperature until the butter has melted and the sugar has dissolved.
  6. Add the egg, melted butter/sugar and the apricot mixture to your dry ingredients and mix until well combined.
  7. Spread muesli bar mixture evenly into your prepared baking tray. Cook for 25-30 minutes our until baked through
  8. Allow the slice to cool slightly and then cut into pieces. For bars I like to cut off the 2 short edges then make one long cut down the center lengthwise. Then you can cut evenly into 10-12 bars
  9. Melt your chocolate and drizzle over your cut bars. Allow the chocolate to fully set before storing your bars in a sealed container or wrap individually in cling film.
