Feijoa Crumble

This feijoa crumble is the perfect cozy dessert for these chilly autumn evenings. Not only will it use up a bunch of feijoas but this recipe is also cheap, easy and absolutely delicious.

Ingredients
  

  • 100 g butter or margarine softened
  • 1/3 cup sugar
  • 3 tablespoons custard powder
  • 2/3 cups flour
  • 2/3 cups oats
  • 3 cups feijoa pulp about 650g
  • 1 tablespoon lemon juice
  • 1/2 cup sugar

Method
 

  1. Preheat your oven to 170 degrees (fan bake)
  2. In a medium sized bowl, mix together the butter, sugar and custard powder. Continue to mix until the mixture is smooth and well combined.
  3. Add the flour and oats. Mix together roughly and then use your fingers to bring everything together, making various sized clumps as you go.
  4. Place the crumble mixture in the fridge while you prepare your feijoas.
  5. Place your feijoas, lemon juice and sugar into a small bowl. Mix until well combined.
  6. Transfer the feijoa mixture into a medium sized oven safe baking dish.
  7. Bake your feijoa mixture for 20 minutes.
  8. Sprinkle your crumble mix over your baked feijoas, making sure to cover the surface evenly. Return the dish to the oven and bake for a further 30 minutes.
  9. When your feijoa crumble is ready the crumble will be golden and cooked through and the feijoas will be bubbling around the edges.
  10. Serve immediately with a drizzle of cream, custard or ice cream.

Notes

Store any in an airtight container in the fridge. Leftovers will keep in the fridge for up to 2 days.
