Cut your cheese into 12 similar sized pieces and lay out your tomatoes, pepperoni and spinach in a way that is easy to grab one piece at a time
Prepare your tomato hearts. Make one angled cut through the middle one of your mini tomatoes. Turn the tomato pieces so that the narrowest edge of each piece becomes the bottom point of the heart and the two ends become the upper curves of the heart. Press the two halves together and use a skewer to secure them.
Next you will place the remaining ingredients onto your skewers. You can do this in any order this is the order that I have done for mine.
Tomato heart, spinach, folded pepperoni, spinach, cheese, tomato heart, cheese, spinach, folded pepperoni, spinach and finally tomato heart.
Repeat the process until you have completed all 6 of your skewers.
Serve immediately or store, covered, in the fridge until serving time.
