Feijoa Crumble

This feijoa crumble is the perfect cozy dessert for these chilly autumn evenings. Not only will it use up a bunch of feijoas but this recipe is also cheap, easy and absolutely delicious.

Ingredients

Feijoas – Scoop out 3 cups of feijoa pulp. This should weight about 650g. Keep your feijoa pieces large and chunky so that they have loads of texture still when they are cooked.

Butter – This recipe works perfectly with a soft salted butter. A dairy free margarine will also work really well in this recipe.

Flour – Plain white flour works best here. Make sure that you do not use self raising flour or baking powder. You do not want any rising agents in your crumble if you want a nice crisp crumbly topping.

Oats – Porridge oats will work great here, I like to use the cheapest quick oats available.

Custard powder – A little bit of custard powder will give your feijoa crumble a subtle custardy, creamy vanilla flavoring and will help the crumble crisp up. You can swap this for a little extra flour or cornflour and 2 teaspoons of vanilla essence.

Lemon juice – To boost the tart flavors of the feijoas and to help prevent browning. If you want a less tart dessert you can swap the lemon juice for water.

Sugar – Plain white sugar.

Make your feijoa crumble

Mix up your crumble.

  • Start by mixing your sugar, butter and custard powder.
  • Then add your flour and oats. Use your finger tips to create various sized clumps.
  • Place your crumble in the fridge while you make the filling.

Make your filling

  • Scoop your feijoas into a bowl with the lemon juice and sugar. Mix well.
  • Place the feijoa mixture into your baking dish and place into a preheated oven.

Bake and serve your feijoa crumble

  • Bake for 20 minutes, add your crumble on top and bake for a further 30 minutes.
  • Serve immediately with a drizzle of cream, custard or ice cream. Try this feijoa ice cream with your feijoa crumble for double the feijoa flavor.

Some helpful tips and ideas

Add some extra fruits. If your tree is sparse or you want to tone down the feijoa flavor you can trade out some of the feijoas for a different fruit. Apples, blueberries, blackberries or pear are all great options

Make a double batch of crumble topping. The topping will store well in the freezer. You can use the crumble for another feijoa crumble later. You can even sprinkle some on top of a feijoa cake just before baking for an easy feijoa crumble cake.

Use a nice deep dish for the best crumble. You can use shallower dish but your dessert will cook faster and will dry out a little. I find a dish that is 20cm in diameter will work best.

Store any leftovers in the fridge, covered well, for up to 2 days.

Ingredients
  

  • 100 g butter or margarine softened
  • 1/3 cup sugar
  • 3 tablespoons custard powder
  • 2/3 cups flour
  • 2/3 cups oats
  • 3 cups feijoa pulp about 650g
  • 1 tablespoon lemon juice
  • 1/2 cup sugar

Method
 

  1. Preheat your oven to 170 degrees (fan bake)
  2. In a medium sized bowl, mix together the butter, sugar and custard powder. Continue to mix until the mixture is smooth and well combined.
  3. Add the flour and oats. Mix together roughly and then use your fingers to bring everything together, making various sized clumps as you go.
  4. Place the crumble mixture in the fridge while you prepare your feijoas.
  5. Place your feijoas, lemon juice and sugar into a small bowl. Mix until well combined.
  6. Transfer the feijoa mixture into a medium sized oven safe baking dish.
  7. Bake your feijoa mixture for 20 minutes.
  8. Sprinkle your crumble mix over your baked feijoas, making sure to cover the surface evenly. Return the dish to the oven and bake for a further 30 minutes.
  9. When your feijoa crumble is ready the crumble will be golden and cooked through and the feijoas will be bubbling around the edges.
  10. Serve immediately with a drizzle of cream, custard or ice cream.

Notes

Store any in an airtight container in the fridge. Leftovers will keep in the fridge for up to 2 days.
