Feijoa Cordial

With just a few ingredients and a bunch of feijoas, you can make your own delicious and refreshing feijoa drink. Feijoa cordial is easy to make and is a great way to use up all of your extra feijoas.

Make your own feijoa cordial.

This recipe is a great way to preserve some of your feijoas when you are struggling to use them up. Feijoa cordial is one of those recipes that we end up making almost every year, its easy and will make plenty of feijoa cordial to last you through the season. You can mix your feijoa cordial with plain or sparkling water, iced tea, or lemonade. You can even use it to create your own cocktails and mocktails.

What you will need

Feijoas – Scoop out the pulp from a bunch of feijoas. You will need a little over 2 cups of feijoa pulp. If you like you can wash and add in some of the feijoa skins too. Just remember to take them out when you blend your feijoas.

Sugar – Plain white sugar. You can increase the sugar a little if your feijoas are very tart.

Lemon juice – You can use fresh lemon juice or bottled for this recipe. You can swap this out for lime juice or vinegar if you like.

Vinegar – White vinegar or apple cider vinegar work well in this recipe. This will help preserve the cordial and stop it from browning.

Vanilla essence – This is optional, vanilla mellows out the feijoa flavor making it taste smoother. If you prefer your feijoa drink more sharp or sour leave it out.

Water – Use regular drinking water for boiling your fruit and adding to your finished cordial. For a fizzy feijoa drink, you can make up your finished cordial with 1 part feijoa cordial and 3 parts sparkling water.

How to make the cordial super smooth?

Feijoas have a slight texture that can still come through in the cordial even after sieving. If this bothers you at all you can strain your syrup again using a muslin cloth. Place the cloth over your sieve, pour the feijoa liquid over to strain. Next gather up the edges of the muslin and squeeze the remaining pulp. Continue on with the rest of the recipe and you will have a completely smooth feijoa cordial.

Getting the most storage time out of your feijoa cordial

A feijoa cordial is a way to preserve feijoas for use well past their expected life span. You can store your feijoa cordial in a few different ways which will each give you a different life span. Here are some options:

  • Simple bottling and storing in the fridge. Pour the hot liquid into clean glass bottles or jars. Place the caps on firmly and allow to cool fully before storing in the fridge for about 2 weeks.
  • Preserving method. Sterilize your bottles and lids and pour the hot liquid into hot jars, place the lids on firmly, making sure that they seal. This should last longer and can be stored in a cool dark place. This should last 1-2 months but I have not personally tested this (as it has never lasted long enough!). Store in the fridge once opened.
  • Freezing individual portions. Place 1/4 cup servings of your feijoa cordial into the portions of a muffin tin. Place the tin into the freezer on a flat surface and allow the syrup to freeze fully. Transfer your frozen cordial to a snap lock bag and store in the freezer for up to one year.

Ingredients
  

  • 500 g feijoa pulp
  • 2 cups water
  • 1/3 cup lemon juice
  • 2 1/3 cups sugar
  • 2 tablespoons white vinegar
  • 2 teaspoons vanilla essance

Method
 

Make the feijoa cordial
  1. Place your feijoas, water and lemon juice into a large saucepan. Heat he mixture on a medium heat and simmer for 10 minutes. The feijoas should be very soft when the mixture is ready.
  2. Use an immersion blender to blend your feijoas until the mixture is smooth.
  3. Next strain the liquid into a large bowl.
  4. Return the liquid to your saucepan and add in the sugar. Mix well.
  5. Bring the mixture to the boil, stirring constantly until the sugar is fully dissolved. Simmer on low for 2 minutes, stirring regularly.
  6. Remove your saucepan from the heat and mix in the vinegar and vanilla.
  7. Pour the hot liquid into clean glass bottles or jars. Place the caps on firmly and allow to cool fully before storing in the fridge for about 2 weeks.
Make your feijoa drink
  1. Mix 1/4 cup of feijoa cordial with 3/4 cup of water to make 1 cup of delicious feijoa juice.
