Apricot and Orange Muesli Bars – with a chocolate drizzle

Whether its crispy cheesy crackers, chocolate chip cookies or slices and muesli bars like these. There is something about homemade snacks that just seem to vanquish the snack need so much better. These apricot and orange muesli bars with a chocolate drizzle are the perfect snack. Loads of flavor, chewy and crunchy textures in a soft oaty base and a thick squiggle of dark chocolate to top it all off!

Soft baked bars are always a winner in our house. You can pack these into lunchboxes for the kids, use them as breakfast option for when your in a rush (or because you don’t really like breakfast but still need to eat). You can even just store them in the freezer and heat them up whenever you need a low effort snack.

Ingredients

Apricot – Dried apricots work best for this recipe.

Orange – Use the zest of one large orange and the juice of about half to soak your apricots.

Oats – Porridge or quick style oats work best for this recipe.

Flour – Plain white all purpose flour.

Baking powder – To give your bars a little bit of rise.

Walnuts – Chopped walnuts give these bars an extra layer of texture. You could swap them out for another chopped nut of your choice or even some pumpkin or sunflower seeds

Butter – Salted butter or unsalted if you prefer.

Sugar – Brown sugar works best for these bars but white sugar will work well too.

Egg – 1 large egg

Chocolate – The finishing touch, dark melting chocolate. You can add a teaspoon of coconut oil to your chocolate to help it drizzle smoothly or you can pipe your chocolate on top in chunky swirls like I have.

Slicing and storing your apricot and orange muesli bars

Slicing – This recipe will make 12 snack size slices or 10 large sized portions. To cut these evenly I like to first cut of the two short edges of the baked slab, this means that every slice will be the same and have only one baked edge (and more importantly, no corner pieces will get avoided). Next halve it lengthwise before cutting it into your desired width slices.

Chocolate coating – Place your cut pieces on a piece of baking paper slightly apart from one another. Drizzle over your melted chocolate and leave it to set fully.

Storing – I like to individually wrap each of my bars in cling film for long lasting freshness but you could also place them into an airtight container for 5-7 days.

Freezing – These freeze really well. Simply place your apricot and orange muesli bars, that have been individually wrapped in cling film, into the freezer. They will be great for around about 3 months in the freezer. When you want to use your frozen bars you can either leave them out to defrost for a couple of hours. Or for an extra special treat, take one out, unwrap it and microwave it for about 40 seconds to serve it warm.

Ingredients
  

  • Zest of one orange
  • 1/4 cup orange juice
  • 2/3 cups dried apricots roughly diced
  • 2 cups rolled oats
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 cup diced walnuts
  • 125 g butter
  • 1/2 cup brown sugar
  • 1 egg
  • 150 g dark chocolate

Method
 

  1. Preheat your oven to 160 degrees fan bake.
  2. Line a large baking tin with baking paper and set aside.
  3. Place the orange zest and juice into a small microwave safe cup or bowl. Microwave for 45 seconds and then set aside to allow the apricots to soften for 10 minutes.
  4. In a large bowl combine the oats, flour, baking powder and walnuts
  5. Place the butter and sugar into a small saucepan and heat over a low temperature until the butter has melted and the sugar has dissolved.
  6. Add the egg, melted butter/sugar and the apricot mixture to your dry ingredients and mix until well combined.
  7. Spread muesli bar mixture evenly into your prepared baking tray. Cook for 25-30 minutes our until baked through
  8. Allow the slice to cool slightly and then cut into pieces. For bars I like to cut off the 2 short edges then make one long cut down the center lengthwise. Then you can cut evenly into 10-12 bars
  9. Melt your chocolate and drizzle over your cut bars. Allow the chocolate to fully set before storing your bars in a sealed container or wrap individually in cling film.
