Oven Baked Potato Wedges
Crispy potato wedges are the perfect side dish. With soft, fluffy insides and flavor packed crunchy outsides these, simple oven baked wedges are an instant favorite.

Homemade wedges, perfect for sides, dipping sauces or snacks
If you have potatoes sitting around, just waiting to be used then you should definitely give this recipe a try. These are so simple to make with minimal prep work required. Simply chop your potatoes, boil them in water for a few minutes, coat in the oil and seasoning mix then bake till crispy. While they bake you can prepare the rest of your meal or just sit back and relax till snack time!
Your homemade wedges will be crispy on the outside and fluffy on the inside.

Ingredients
Potatoes – This recipe uses one kilo of potatoes. I like to use potatoes that are about fist sized or smaller. Pretty much any potatoes will work but the best type of potatoes to use are floury roasting or all rounder potatoes.
Cooking Oil – Whatever cooking oil you have on hand should work well.
Spice mix – I use paprika, Garlic powder, coriander and cumin for a warm rich flavor and season with some salt and pepper. You can use whatever spice mix you like or keep it simple with just salt and pepper.
Brown sugar – My secret ingredient for crispy, delicious roast potatoes. Just a little bit of brown sugar will elevate the flavor of the spices and help create that crispy coating on your wedges.

Wedges are really easy to make at home. With a few simple steps, you will have crispy and delicious wedges.
Cut your potatoes into even wedges
Parboil the wedges for about 5 minutes or until they are just tender
Drain well and toss with oil and flavorings.
Bake in a preheated oven for 30 minutes, turn half way through for even crispiness.
Serve immediately with your favorite dipping sauces
How to cut potatoes for wedges
First make sure your potatoes are washed and and dried.
Cut each potato in half lengthwise and then place the cut edges down onto your cutting board.
Cut each half in half again so that you have quarters. Leave the pieces together, this will help you cut your segments. Hold your knife at an angle and cut each quarter into halves again or into thirds if your potatoes are large.

- Cut each of our potatoes in half lengthwise. Place halves onto your chopping board, cut edge down. Then cut each half into 4-6 pieces, depending on the size of your potato.
- Place your cut potatoes into a large saucepan filled with cold, salted water. Heat on high until the water is boiling. Boil for about 5 minutes or until the potatoes are just tender.
- Strain the water form your parboiled potatoes, and transfer them into a large bowl.
- Preheat your oven to 200 degrees fan bake and line a large baking tray with baking paper.
- Combine your spices, salt and pepper and sugar in a small cup or bowl.
- Drizzle the oil over the wedges and then sprinkle the spice mix on top. Carefully toss the mixture until the the wedges are evenly coated.
- Place the wedges onto your prepared baking sheet in a single layer and place into your preheated oven. Bake for 30 minutes, flipping half way through. Your wedges are ready when they are golden, crispy and baked through.
- Serve immediately with your favorite sauces for dipping.
