Easy Cheese Sauce Recipe

Ingredients
Cheese – Any firm grateable cheese will work well for this recipe. The flavor of your cheese will influence the flavor of your sauce. I have used Colby, cheddar and Edam, all with great results.
Milk – Whole fat milk is used in this recipe for a rich and dense cheese sauce.
Evaporated milk – This helps to stop your cheese sauce from splitting and gives it a great rich flavor. Bonus: the leftover evaporated milk is the perfect amount to make homemade chocolate fudge!
Butter – Use salted butter for the best flavor in your sauce.
Flour – All purpose flour is used to thicken your sauce.

Making cheese sauce is really easy
- Melt your butter in a small saucepan on a medium heat. Add in the flour and mix until it is well combined and bubbling.
- Add half of your milk and mix it through until the mixture is smooth. Next add in the remaining milk and evaporated milk, mix well to combine.
- Continue to heat, stirring constantly, until the mixture thickens. This should take about 8 minutes.
- Mix in your grated cheese. Heat and stir for another minute or two or until the cheese has completely melted.
- Season with salt and pepper. Serve your cheese sauce warm with your favorite sides.

Tips and tricks
- A silicone spatula works better than a whisk. A silicone spatula will help you make sure that you are scraping the entire base of the pan, which allows the sauce to cook evenly. Slow controlled stirring will also mean less lumps and less chance of your sauce splitting.
- Use a heavy bottomed, non stick pan. This will disperse the heat more evenly through your cheese sauce, stopping it from burning and sticking to the bottom of your pan.
- Strain out any lumps. Sometimes things don’t go to plan and sauces can end up lumpy, simply strain your sauce and heat till warm for a simple fix.
- Make your cheese sauce gluten free.To so this swap out your flour for cornflour keeping. Combine 2 tablespoons of cornflour with 1/4 cup of the evaporated milk and set aside. Place the remaining evaporated milk into your saucepan with the butter, milk and cornflour mixture and heat until thick. Melt in your cheese and your cheese sauce is ready to serve
