– Simply dump all of your sauce ingredients into your slow cooker.

– Add your portioned out ribs, making sure to fully coat them in the sauce.

– Cook on high for 6 hours.

Ingredients

Ribs – Both pork or beef ribs will work well for this recipe. Choose pieces with lots of meat on them.

Tomatoes –  Tinned tomatoes are the base for your sauce. Use diced tomatoes in juice.

BBQ sauce – Use your favorite BBQ sauce. BBQ sauce will give your ribs loads of flavor so a deep and smokey BBQ or steak sauce will work best here.

Malt vinegar – Vinegar cuts through the sweetness of the BBQ sauce and the brown sugar and helps to tenderize the meat. Use malt vinegar for the best results but you can also use white vinegar or apple cider vinegar too.

Mustard – Dijon mustard gives a great earthy flavor to your ribs. Regular American mustard will work well too though.

Soy sauce – For saltiness and richness use a dark soy sauce. You can substitute this for 1-2 teaspoons of salt if you don’t have any on hand.

Hot sauce – Just enough to add some warmth to the flavor of your sauce. You can leave this out of you prefer or you can double it up if you want a bit of a spicier kick.

Pasta – Mac and cheese is perfect especially with some extra sauce drizzled on top. For a more veggie filled option a delicious green pasta or pumpkin pasta would be great too

Vegetables – Creamy mashed potatoes always goes really well with saucy ribs, so does cheesy cauliflower bake. For a healthier option you could try boiled potatoes, roasted kumara,corn on the cob, green beans or a fresh side salad or slaw. You can even slice up some carrots or potatoes and add them to your slow cooker to cook along side your ribs.

Breads – Don’t forget to have some bread on hand to mop up all of that sauce! Try some simple bread rolls, this cheesy garlic pull apart bread or these jalapeno cheddar buns.

Ingredients
  

  • 1.5 kg ribs pork or beef
  • 1 tin diced tomatoes in juice
  • 1/3 cup BBQ sauce
  • 1/3 cup brown sugar
  • 1/4 cup malt vinegar
  • 1 tablespoon crushed garlic
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon hot sauce
  • 1 teaspoon white pepper

Method
 

  1. Place everything except for your ribs into your slow cooker. Stir well to combine.
  2. Use a sharp knife to cut the ribs into serving sized sections. Cut between the rib bones. I like to cut a large rack into 3-4 chunks to serve as a main meal. Or into 6 -8 smaller sized chunks if this is part of a large family style meal or pot lunch dinner party.
  3. Place your rib sections into your sauce, making sure each piece is coated generously.
  4. Cook on high for 6 hours or until tender and easily pulled apart when tested with a fork.
  5. Serve warm with your favorite side dishes.
