Baked BBQ Meatballs

Meatballs are such a great weeknight dinner option. Not only are these baked BBQ meatballs so quick and easy to make, they are also extremely versatile and full of flavor.

Ingredients
  

  • 500 g beef mince
  • 1/2 red onion finely diced
  • 1/4 cup BBQ sauce plus extra for cooking
  • 1 egg yolk
  • 1/3 cup dried breadcrumbs
  • 1 beef stock cube crumbled
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder

Method
 

  1. Place the breadcrumbs, stock cube, pepper and garlic powder into a large mixing bowl. Mix until well combined.
  2. Add the mince, onion, sauce and yolk to your dry ingredients. Mix until everything has just combined.
  3. Roll your mince mixture into 16 evenly sized meatballs (each one will be about 40g each).
  4. Place your meatballs onto a lined baking tray with a little bit of space between each one. Cover your meatballs with a layer of clingfilm and place them into the fridge for 30 minutes.
  5. When you are ready to bake your meatballs, preheat your oven to 180 degrees, fan bake. Use a pastry brush to coat the tops of each meatball with a little bit of extra BBQ sauce. Bake for 25 minutes or until the meatballs are firm and cooked through.
  6. Serve hot with pasta, in subs or sandwiches or as a main alongside your favorite vegetables.
