Baked BBQ Meatballs
Meatballs are such a great weeknight dinner option. Not only are these baked BBQ meatballs so quick and easy to make, they are also extremely versatile and full of flavor.

Ingredients
Mince – Beef mince forms the base of these meatballs. Use a cheaper mince with a high fat percentage for more juicy meatballs.
BBQ sauce – Use a BBQ that you love the flavor of.
Bread crumbs – I like to use dried breadcrumbs for this recipe, they will soften and soak up the flavors as the meatballs cook.
Egg – Use one large egg yolk.
Red onion – This adds more moisture and flavor to your meatballs. Make sure your onion is finely diced.
Seasoning – A beef stock cube will replace the need for adding in any extra salt while boosting the beef flavor in your meatballs. Add some pepper and garlic powder for a simple versatile flavor. Feel free to tweak the seasonings to suit your family.


The best way to mix meatballs
Mix your meatballs by hand for the best results! By using your hands you are less likely to over mix the meat, meaning that your meatballs will come out more juicy and tender. Use disposable kitchen gloves when you are mixing and rolling your meatballs for easy clean up.
Prepping meatballs for a crowd
One of the great things about these meatballs is how perfect they are for serving a crowd. Your BBQ meatballs will bake perfectly in the oven meaning you can prepare them ahead of time and then cook them later with very little effort. You can prep a big batch by simply doubling or tripling the quantities. Mix and roll your meatballs as you would for a single batch. Store your meatballs, covered in the fridge for up to 24 hours or freeze the prepared meatballs well ahead of time to save even more time.

What to serve with your meatballs

Method
- Place the breadcrumbs, stock cube, pepper and garlic powder into a large mixing bowl. Mix until well combined.
- Add the mince, onion, sauce and yolk to your dry ingredients. Mix until everything has just combined.
- Roll your mince mixture into 16 evenly sized meatballs (each one will be about 40g each).
- Place your meatballs onto a lined baking tray with a little bit of space between each one. Cover your meatballs with a layer of clingfilm and place them into the fridge for 30 minutes.
- When you are ready to bake your meatballs, preheat your oven to 180 degrees, fan bake. Use a pastry brush to coat the tops of each meatball with a little bit of extra BBQ sauce. Bake for 25 minutes or until the meatballs are firm and cooked through.
- Serve hot with pasta, in subs or sandwiches or as a main alongside your favorite vegetables.
