Preheat your oven to 180 degrees and line an oven tray with baking paper.
Roughly dice your walnuts and set aside while you prepare the caramel.
Place the brown sugar, butter and cream into a medium sized saucepan. Heat on a medium heat, stirring occasionally.
Bring the mixture to a slow simmer, stirring regularly until the sugar has dissolved.
Add the oats and diced walnuts into your caramel mixture. Mix well, until the dry ingredients are evenly coated in the caramel.
Transfer the mixture onto your prepared oven tray. Spread it out thinly and bake for 10 minutes. Toss the mixture half way through so that it cooks through evenly.
Remove the tray from the oven when your cereal topper is all golden and has slightly darkened in color.
Allow everything to cool completely before using your hands to crumble the mixture into a sealed container or snap lock bag.
