Method
Make the feijoa cordial
- Place your feijoas, water and lemon juice into a large saucepan. Heat he mixture on a medium heat and simmer for 10 minutes. The feijoas should be very soft when the mixture is ready.
- Use an immersion blender to blend your feijoas until the mixture is smooth.
- Next strain the liquid into a large bowl.
- Return the liquid to your saucepan and add in the sugar. Mix well.
- Bring the mixture to the boil, stirring constantly until the sugar is fully dissolved. Simmer on low for 2 minutes, stirring regularly.
- Remove your saucepan from the heat and mix in the vinegar and vanilla.
- Pour the hot liquid into clean glass bottles or jars. Place the caps on firmly and allow to cool fully before storing in the fridge for about 2 weeks.
Make your feijoa drink
- Mix 1/4 cup of feijoa cordial with 3/4 cup of water to make 1 cup of delicious feijoa juice.
