Cut each of our potatoes in half lengthwise. Place halves onto your chopping board, cut edge down. Then cut each half into 4-6 pieces, depending on the size of your potato.
Place your cut potatoes into a large saucepan filled with cold, salted water. Heat on high until the water is boiling. Boil for about 5 minutes or until the potatoes are just tender.
Strain the water form your parboiled potatoes, and transfer them into a large bowl.
Preheat your oven to 200 degrees fan bake and line a large baking tray with baking paper.
Combine your spices, salt and pepper and sugar in a small cup or bowl.
Drizzle the oil over the wedges and then sprinkle the spice mix on top. Carefully toss the mixture until the the wedges are evenly coated.
Place the wedges onto your prepared baking sheet in a single layer and place into your preheated oven. Bake for 30 minutes, flipping half way through. Your wedges are ready when they are golden, crispy and baked through.
Serve immediately with your favorite sauces for dipping.
